1 teaspoon sea salt
1/2 teaspoon cumin

Steps:

  • Heat oven to 400°F.
  • Dry the chickpeas using a kitchen towel.
  • Place the chickpeas on a baking sheet.
  • Toss with salt and olive oil.
  • Roast for 30 minutes, shaking them after 15 minutes to rotate.

1 cup dried chickpeas ( or 1 1/2 cups canned)
2 cups spinach (chopped and loosely packed)
1 carrot (medium, grated)
1 cup cherry tomatoes
½ cup cashews
1 cup almond milk
1 teaspoon Italian seasoning
1½ tablespoon olive oil
5 cloves garlic (minced)
1 green chili (minced)
salt and pepper to taste

Steps:

  • Roast cherry tomatoes
  • Cook the dried chickpeas, if using
  • Cook the pasta
