1 can (10-3/4 ounces) condensed nacho cheese soup, undiluted
1 can (10-1/2 ounces) condensed cream of chicken soup, undiluted
2-2/3 cups whole milk
1 can (10 ounces) chunk white chicken, drained
1 can (10 ounces) enchilada sauce
1 can (4 ounces) chopped green chiles
Sour cream

Steps:

  • In a large saucepan, combine the soups, milk, chicken, enchilada sauce and chiles. Cook and stir over medium heat until heated through. Serve with sour cream.

4 boneless skinless chicken breast halves (6 ounces each)
2 teaspoons salt-free Southwest chipotle seasoning blend
1 tablespoon olive oil
1/4 cup enchilada sauce
1/2 cup shredded sharp cheddar cheese
2 tablespoons minced fresh cilantro

Steps:

  • Sprinkle chicken with seasoning blend. In an ovenproof skillet, brown chicken in oil. Top with enchilada sauce, cheese and cilantro. Bake at 350° for 18-20 minutes or until a thermometer reads 170°.
