This is a healthy alternative to what you get in the stores, but still with all the taste. If you don't like anchovies I would not bother making it, as it isn't nearly as good without them

2 large head romaine lettuce, outer leaves removed & discarded
1/4 cup walnuts (optional)
2 tablespoons roasted tahini
1 (2 ounce) can anchovies, drained of oil, rinsed and chopped
4 medium garlic cloves, chopped
3 tablespoons lemon juice
2 tablespoons balsamic vinegar
2 tablespoons extra virgin olive oil
salt
cracked black pepper

Steps:

  • Rinse lettuce.
  • cut into bite size pieces.
  • and dry.
  • Try to get lettuce as dry as possible so dressing is not diluted.
  • If you have a salad spinner it is best.
  • Blend dressing ingredients together for 1-2 minutes, drizzling olive oil at end a little at a time.
  • Toss romaine with desired amount of dressing and walnuts if using them.
  • There will be dressing left over.
  • It saves very well in your refrigerator for 2 weeks.

This simple Healthy Caesar Salad is made with crisp romaine lettuce, homemade crunchy croutons, and drizzled in a flavored with garlic, anchovy, and parmesan Healthy Caesar Dressing. So good, so easy Caesar Salad is ready in 10 minutes!

For the Croutons:
1 ½ cup 50 g cubed French Baguette or any bread
1 Tbsp. 7 g olive oil
½ tsp. garlic powder
½ tsp. Italian seasoning
ground black pepper to taste
For the Caesar Salad:
1 large head romaine lettuce ((240 g chopped))
1/4 cup 25 g parmesan cheese, shaved or shredded
½ cup 120 g Healthy Caesar Dressing

Steps:

  • Make Stovetop Croutons:
  • Heat a large skillet or frying pan over medium-high heat.
  • Add the bread cubes to the skillet, sprinkle with garlic powder, Italian seasoning, pepper, and drizzle with olive oil. Toss until evenly coated and arrange in a single layer.
  • Cook and stir until lightly golden and crisp. Remove from the heat and let it cool completely.
  • Make Caesar Salad:
  • Wash and dry the lettuce and pat it dry with paper towels.
  • Cut or tear the lettuce leaves into bite-size pieces and place onto a salad plate. Drizzle the salad dressing over the top, sprinkle with shaved or shredded parmesan cheese and croutons. Toss lightly until the lettuce is evenly coated.
  • Serve immediately and enjoy!

    1. Finely grate the lemon zest and Parmesan into a large bowl. Slice and add the anchovies, along with the yoghurt, mustard and Worcestershire sauce.
    2. Squeeze in half the lemon juice, add 1 tablespoon of vinegar and 2 tablespoons of extra virgin olive oil and mix to make your dressing.
    3. Now you’re going to turn regular salad into a thing of beauty by either taking your time with good knife skills, or ideally, investing in a mandolin for ease, elegance and accuracy (use the guard!). Start by peeling and very finely slicing the red onion, then stir it through the dressing.
    4. Click off and discard any tatty outer leaves from the cauliflower, then very finely slice it. Finely slice the lettuce by hand and pile both on top of the dressed onion, tossing together only moments before serving.
    5. Put 1 teaspoon of olive oil in a frying pan on a medium heat. Pick the rosemary leaves over the chicken and lightly season it on both sides, flattening it slightly with the heel of your hand. Cook for 4 minutes on each side, or until golden and cooked through.
    6. Cube the bread and toast alongside the chicken, moving regularly until evenly golden and gnarly, removing only when super-crispy.
    7. Toss the salad together and season to perfection, slice up the chicken and serve with a sprinkling of croutons and lemon wedges for squeezing over.
