21 ounces honey
1 tablespoon thyme
18 ounces Hazelnuts

Steps:

  • Pour honey into a saucepan and heat on low heat for 2-3 minutes. Add hazelnuts and thyme and simmer for another 20-25 minutes. Place a drop of hot honey nut mixture into a glass of ice-cold water. If drop freezes immediately, brittle is ready.  
  • Spread baking sheet approximately 8 x 10 inches lined with parchment paper. Spread honey and hazelnut mixture on paper and smooth. Cool and separate from paper. Cut into cubes and serve placed into paper candy liners.

1/2 cup margarine
1/2 cup dry red wine
2 Eggs
3 cups Flour
2 teaspoons Baking soda
1 teaspoon Grated lemon peel
1/2 teaspoon ground allspice
1/2 teaspoon ginger
1/2 teaspoon salt
1 cup finely chopped hazelnuts

Steps:

  • Preparation 1 In a large bowl combine honey, margarine, wine and eggs; beat thoroughly. In another bowl, combine flour, baking soda, lemon peel, spices and salt; mix well. 2 Add dry ingredients to honey mixture; beat until thoroughly mixed. Stir in hazelnuts.3 Pour into greased and floured 13x9x2-in. pan. Bake at 325°F for 35 to 40 minutes or until wooden pick inserted in the center comes out clean.4 Cool 15 minutes on rack, then cut out squares of cake and place on platter. Dust with powdered sugar.
