Hawaiian taro (poi) flour and purple food coloring are used to create these unique rolls.

1?? cups warm water (90 degrees F (32 degrees C))
1 cup poi (taro root powder)
½ cup butter, softened
1 egg
2?½ teaspoons active dry yeast
1 teaspoon purple food coloring
1 cup white sugar
¼ teaspoon salt
4 cups all-purpose flour, or as needed

Steps:

  • Combine water, poi, butter, egg, yeast, and purple food coloring in the bowl of a stand mixer fitted with the dough hook. Let stand until yeast softens and forms a creamy foam, about 5 minutes. Add sugar and salt.
  • Mix on low speed, adding flour gradually, until dough comes together and texture is smooth.
  • Turn dough out onto a floured work surface. Divide into 18 pieces; shape into rolls.
  • Preheat oven to 325 degrees F (165 degrees C). Line a baking sheet with aluminum foil.
  • Place rolls on the prepared baking sheet. Cover and let rise until doubled, about 20 minutes.
  • Bake in the preheated oven until bottoms start to brown, about 20 minutes.

The Polynesian Cultural Center has a fantastic luau. One of the best things on the menu is a taro roll (go to polynesia.com for their recipe). The rolls are divine, but I wanted to make a bread out of it for the breadmaker (less work!). I altered the proportions for the machine and dropped the food coloring. A sweet, light bread.

Number Of Ingredients 8

2/3 cup water
1 1/4 teaspoons yeast
1/2 cup sugar
1/4 cup butter
1 egg
1/2 cup poi
3 1/4 cups white flour
1/8 teaspoon salt

Steps:

  • In your breadmaker, pour in water, yeast, sugar, butter, egg and poi.
  • Next add flour.
  • Finally, place salt on the top.
  • Run your breadmaker as for a 2 pound loaf.
  • This is a high riser, so expect it to just fit into a 2 pound breadmaker.

  • In a small bowl, dissolve yeast in warm water; let stand until bubbles form on surface, 5 minutes. Meanwhile, in a small saucepan, heat butter until melted. Add pineapple juice and whole milk and continue to heat gently until mixture reaches 110°-115°.
    In a large bowl, combine 3 cups flour, potato flakes, sugar, salt and ginger. Add yeast and butter mixtures to dry ingredients; beat just until moistened. Add eggs; beat until smooth. Beat in vanilla. Stir in enough remaining flour to form a soft dough; dough will be sticky. , Turn dough onto a floured surface; with floured hands, knead until smooth and elastic, 8-10 minutes, adding more flour to surface and hands as needed. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1-1/4 hours., Punch dough down. Turn onto a lightly floured surface; divide into thirds. Shape each into a ball. Place in 3 greased 9-in. round baking pans lined with parchment. Cover and let rise until doubled, about 45 minutes.
    Preheat oven to 350°. Bake until golden brown and internal temperature of loaves reaches 200°, 30-35 minutes, covering loosely with foil during the last 10 minutes of baking if needed to prevent tops from overbrowning. Remove from pans to wire racks to cool.
