Homemade Hawthorn Jelly - Practical Self Reliance image

Hawthorn jelly is a tasty way to take your medicine and easy to make at home.  All you need is hawthorn berries, sugar and lemon juice.  No added pectin required.

Number Of Ingredients 4

1.5 to 2 lbs hawthorn berries
2-3 cups water
2 cups sugar
1/4 cup lemon juice

Steps:

  • Simmer the Hawthorns in water for roughly 30 minutes until they've completely disintegrated.  Mash them with a potato masher to help the process.
  • Strain the mixture through a jelly bag or cheesecloth and measure the juice.  For every 2 cups of juice, add 2 cups of sugar and 1/4 cup of lemon juice.  It takes roughly 1.5 to 2 pounds of haws to yield 2 cups of juice.
  • Return the strained hawthorn juice, sugar and lemon juice to the stove and boil rapidly for 10-15 minutes until it reaches gel stage.
  • Pour the jelly into prepared canning jars leaving 1/4 inch headspace.  Process in a water bath canner for 5 minutes, or store in the refrigerator for immediate use.

These small trees are members of the Hawthorne family. The fruit is small and apple-like and ripens during the late April and early May in East Texas. They have beautiful white blossoms in the spring and are desirable as ornamentals as well as for wildlife cover and forage. The fruit is also found in bayous surrounding lakes, such as Caddo Lake on the Texas/Louisiana border. Mayhaws are often collected out of the water from boats to be used to make jelly. Mayhaw jelly is considered by some to be among the finest jellies in the world. From the Southern chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Cooking time is approximate. While this recipe is written in an old-fashioned way, it is perfectly safe if processed using modern methods. 1 pint water

Steps:

  • Wash mayhaws and cook with water until soft enough to mash; 10 to 15 minutes; strain well.
  • Measure juice and bring to a boil.
  • Add 1 cup sugar for each cup juice and cook to 225F or jelly stage.
  • Pour into hot sterilized jars and seal.
