Here's a pizza that delivers just what the kids want on half the crust--a thin layer of pizza sauce and lots of gooey cheese. There are lots of extras on the other side for more adventurous palates.

Yield Makes 4 servings

Number Of Ingredients 8

2 teaspoons olive oil
½ (24-oz.) package refrigerated pizza crusts
2 plum tomatoes
8 pitted kalamata or other ripe olives
¼ small red onion
? cup pizza sauce
2 ounces crumbled feta cheese with basil and sun-dried tomato
1 cup (4 oz.) shredded Cheddar-mozzarella cheese blend

Steps:

  • Preheat oven to 425°. Brush oil over pizza crust; place on an ungreased baking sheet. Bake at 425° for 5 minutes.
  • Meanwhile, thinly slice tomatoes, halve olives, and thinly slice onion.
  • Remove crust from oven; spread pizza sauce over pizza crust, leaving a 1-inch margin. Arrange tomato, olives, and onion over half of pizza; sprinkle with feta cheese. Sprinkle Cheddar-mozzarella cheese over remaining half of pizza.
  • Bake at 425° for 8 minutes or just until cheese melts.

8-10 cups assorted lettuce greens (about 1 1/2 - 2 heads, washed, dried, and chopped)
1 avocado (diced)
2 hard-boiled eggs (diced)
1/2 - 1 cup cheese
2 cups tomatoes (diced or red peppers)
1 cup cooked chicken (diced (1 chicken breast))
1/2 pound cooked bacon or ham (chopped)
1/2 - 1 cup fruit
1 lemon (juiced)
Homemade Red Wine Vinaigrette

Steps:

  • Wash, dry, and chop lettuce greens.
  • Prepare and chop other ingredients. Sprinkle some lemon juice on avocado and any fruit that will brown to keep it looking nice and fresh!
  • Arrange lettuce greens on a large platter.
  • Down the center of the lettuce-covered platter arrange a strip of diced tomatoes. Add a strip of each of your ingredients, doing your best to create an appealing variety of colors.
  • Get out some salad tongs and serve with a homemade red wine vinaigrette or dressing of your choice.
  • Enjoy!

HAVE IT YOUR WAY OMELET | JUST A PINCH RECIPES
My husband & I had these Omelet's for the first time when we went on a retreat last month at a Monastery in Ohio. They were so delicious and we were so shocked that they cooked them in ziploc baggies. I was skeptical that the omelets would cook through with cheese inside too. To my surprise we loved it and they were light and fluffy and yummy too. So, this Memorial Day weekend May 30,2011 I made them for our family at the camp and they fell in love with them too. Now, my Dad is going to make them for his hunting buddies when "hunting season" rolls around in the fall. I hope you enjoy.
