- Preheat air fryer to 375°F for 5 minutes. Spread butter evenly on 1 side of all 4 slices of bread. Place 2 slices of bread, buttered-side down in air fryer. Top each piece with 1 slice of Cheddar and 1 slice of Havarti. Place remaining bread slices on top of each sandwich, buttered side up.
- Cook 7 minutes. Flip, and cook an additional 3 minutes, or until golden and toasted all around.

- Oven method (great for a crowd of six or fewer): Put a rimmed baking sheet on the middle rack of the oven and preheat to 450 degrees F. Make one sandwich per person: Sandwich 2 slices of cheese between 2 slices of bread. Spread or brush the outside of the sandwich with 1 tablespoon of fat. Place on the preheated baking sheet and cook until the cheese starts to melt, about 5 minutes. Flip the sandwich and bake until golden brown, an additional 5 minutes.
- Panini press method (for crispy crunchy sandwich that needs minimal attention): Sandwich 2 slices of cheese between 2 slices of bread. Preheat a panini press to medium heat. Spread or brush the outside of the sandwich with 1 tablespoon of fat and place in the press. Close the top and cook until lightly browned and the cheese is melted, 5 to 6 minutes.
- Skillet method (fool-proof and low-tech): Sandwich 2 slices of cheese between 2 slices of bread. Preheat a skillet over medium-low heat. Spread or brush the outside of the sandwich with 1 tablespoon of fat and cook until lightly browned, 3 to 4 minutes. Flip the sandwich, and continue cooking until browned and the cheese is melted, 3 to 4 minutes more.

- For the Thousand Island dressing: Mix the mayonnaise, chili sauce, ketchup, relish and garlic in a medium bowl. Season with salt and pepper. For the chipotle mayonnaise: Mix the mayonnaise and chipotle in a medium bowl. Season with salt and pepper. For the Reuben rolls: Spread Thousand Island dressing on 6 wraps. Top each with 2 slices of dill havarti, a layer of corned beef and 1/4 cup sauerkraut. Roll up each into a log. Wrap in plastic and refrigerate up to 6 hours. Refrigerate the remaining dressing. For the turkey-ham rolls: Spread chipotle mayonnaise on the remaining 6 wraps. Top each with 2 slices of muenster cheese and then layers of turkey, lettuce and ham. Roll up each into a log. Wrap in plastic and refrigerate up to 6 hours. Refrigerate the remaining chipotle mayonnaise. Before serving, preheat the oven to 400˚. Unwrap the Reuben rolls and place on a baking sheet. Bake until the cheese is melted, about 10 minutes. Slice into thick rounds. Unwrap the turkey-ham rolls and slice into thick rounds. Serve with the remaining Thousand Island dressing and chipotle mayonnaise.
