Here's what you need: chicken breasts, bacon, spring onions, cream cheese

4 chicken breasts
4 rashers bacon, chopped
2 spring onions, chopped
½ cup cream cheese

Steps:

  • Slice into the chicken several times, about ½ cm (¼ inch) apart, but only cut about 85% of the way through, leaving the bottom intact.
  • Cook the bacon over a medium heat until it starts to get crispy.
  • Preheat the oven to 350°F (180°C).
  • Stir in the spring onions and cook for another minute or so.
  • Add the cream cheese and cook until melted.
  • Allow filling to cool to the touch, and then fill each segment of the chicken breast with about 1 teaspoon of the mixture.
  • Bake in the centre of the oven for 18-22 minutes until the chicken is cooked through and the juices run clear.
  • Enjoy!

4 Boneless, Skinless Chicken Breast
4 slice Bacon
2 Scallion
1 clove Garlic
125 gram Cream Cheese
1/2 cup Cheese

Steps:

  • Using a sharp knife, make shallow cuts horizontally across the Boneless, Skinless Chicken Breast (4). Transfer to a baking tray lined with non-stick baking paper.
  • In a large fry pan over medium heat, add Bacon (4 slice). Cook until slightly crisp.
  • Add in Garlic (1 clove) and Scallion (2). Cook for 2-3 minutes.
  • Add in Cream Cheese (125 gram). Allow to melt into the mixture. Transfer the mixture to a dish and allow to cool.
  • Spoon the mixture in between the gaps in the chicken. Top with Cheese (1/2 cup).
  • Bake at 180 degrees C (350 degrees F) for 20-25 minutes, or until chicken is cooked all the way through.
  • Allow to cool for 5 minutes.
  • Serve and enjoy!
