- Tip the lamb, apricots, pine nuts, breadcrumbs, egg, cumin, half the coriander, half the onion and half the Belazu Rose Harissa Pesto into a large bowl with some seasoning. Mix well, using clean hands, and roll into 28-30 meatballs, transfer to a plate or tray and chill for 10 minutes.
- Heat 1 tbsp of the oil in a large, deep frying pan and fry the meatballs until golden brown all over. Scoop out onto a plate when browned using a slotted spoon – you may need to do this in batches.
- Heat the remaining oil in the pan and fry the remaining onion for 5 minutes until softened. Stir in the garlic and chilli flakes, if using, and cook for 1 minute more until fragrant. Tip in the tomatoes, half a can of water, the remaining Belazu Rose Harissa Pesto, the chickpeas and pomegranate molasses. Bring to a simmer and cook for 15-20 minutes or until thickened and saucy. Nestle in the meatballs and pour in any resting juices, then return to a simmer and cook, covered, for 10 minutes until the meatballs are cooked through.
- Scatter over the feta and a few more pine nuts, then top with a swirl of yogurt and the rest of the coriander. Serve with some buttered couscous on the side.

- Finely chop shallots and garlic. Combine garam masala, half of the shallots, half of the garlic, ½ cup cilantro, and 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt in a large bowl; season with pepper. Add pork and mix gently until just combined. Divide into 12 pieces and roll into balls.
- Heat 1 Tbsp. oil in a large skillet over medium-high. Cook meatballs, turning occasionally, until browned in spots, 5–8 minutes. Transfer to a plate.
- Reduce heat to medium; cook remaining shallots and garlic in skillet, stirring often, until garlic is softened, about 2 minutes. Stir in harissa paste, coconut milk, and 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt; season with pepper. Bring to a simmer, reduce heat to medium-low, and cook until slightly thickened, 6–8 minutes.
- Nestle meatballs into sauce; cover and cook 10 minutes. Turn meatballs over; cook, uncovered, occasionally spooning sauce over, until sauce is about the consistency of marinara, 8–10 minutes.
- Meanwhile, heat remaining ¼ cup oil in a medium saucepan over medium-high. Add beans and ½ tsp. sumac; season with salt and pepper. Cook, stirring and mashing beans and adding up to ¼ cup water a little at a time to loosen if needed, until heated through and almost completely mashed, about 3 minutes.
- Divide beans among plates; top with meatballs and sauce. Scatter cilantro leaves and sumac over.

- In a large bowl, combine ground chicken, bread crumbs, herbs, 2 cloves garlic, 2 tablespoons harissa, coriander, and cumin. Season well with salt and pepper. Form into 16 golf ball sized meatballs. In a large deep sided skillet or Dutch oven, heat oil over medium heat. Add meatballs and cook until golden all over, turning every 2 to 3 minutes, about 10 minutes total. Remove from skillet and place on a plate. To same skillet, add onion and cook until soft, 5 minutes. Add remaining 2 cloves garlic and cook until fragrant, about 1 minute. Add diced tomatoes and remaining 2 tablespoons harissa. Season with salt and pepper. Bring to a boil, then reduce heat to a simmer. Return meatballs to skillet and cover. Simmer until meatballs are cooked through and internal temperature is 165°. Garnish with herbs to serve.
