These rye slices topped with sausage and cheese are so easy and so delicious that they are sure to please. In fact, my husband loves them so much that I sometimes make them on regular-sized rye bread for dinner.

Number Of Ingredients 6

1 pound fresh, ground pork sausage
3 tablespoons minced onion
½ teaspoon garlic powder
¼ teaspoon ground black pepper
1 cup process cheese sauce
16 ounces cocktail rye bread

Steps:

  • In a large skillet, cook sausage over a medium heat until it is browned and cooked through. Stir onion, garlic powder, black pepper, and process cheese into the skillet. Stir until the cheese is melted and the ingredients are well combined.
  • Spread 1 tablespoon of mixture onto each slice of cocktail rye. Serve warm.

1 lb ground beef
1 lb hot pork sausage
1 small onion, finely diced
1 (16 ounce) package Velveeta cheese
cayenne pepper
red pepper flakes
1 loaf sliced rye cocktail bread

Steps:

  • brown hamburger, sausage and onion.
  • Add Velveeta cheese until melted, sprinkle cayenne pepper and pepper flakes to taste.
  • Let cool completely.
  • Mound onto cocktail rye slices and bake at 350 for 10-12 minutes or until bubbly.

If serving immediately, preheat oven to 425°F. Lay bread slices onto baking sheet. Spoon dollop of meat mixture onto bread and bake for about 15 minutes (oven times may vary). If assembling ahead of time, lay bread slices onto freezer safe baking sheet. Spoon dollop of meat mixture onto bread and place in freezer for about an hour. Remove and place frozen hanky pankies into a freezer safe Ziploc bag. Store until ready to serve. When serving, place frozen hanky pankies on a baking sheet and bake for about 15-20 minutes. ENJOY.

  • NOTE VARIATION: The above directions are off of my original recipe...I put all the ingredients (except bread) into a regular size crock pot (not one of the big oval ones) and just cook on low till the cheese is melty and everything is almost bubbly. Just serve with bread right out of the crock pot. I find this to be much simpler than baking them although when the bread gets toasty on the edges from the baking process it makes them a little better I think. I have also used 2 lb. of the hot sausage and omitted the ground chuck for more zest!! Tweak to your taste.
