1 lb ground beef
1 small onion, diced
2 cloves garlic (minced)
2 cups peeled and chopped potatoes
2 cans (14.5 oz each) beef broth
1 can (10 oz) condensed tomato soup
1 can (15 oz) diced tomatoes
16 oz frozen mixed vegetables
1 tsp Worcestershire sauce
1 tsp dried parsley
1/2 tsp dried basil
1 tsp salt
Black pepper (to taste)

Steps:

  • On the stovetop place a large soup pot, add in the ground beef, onion, garlic, and salt then cook until brown
  • Crumble the meat as it cooks to create the perfect consistency for your soup, Drain the fat from the ground beef then place back on the soup pot
  • Now add in the chopped potatoes, beef broth, tomato soup, diced tomatoes, Worcestershire sauce, and the rest of the seasonings and mix well
  • Bring to a boil then reduce the heat to medium-low, let this cook on a simmer for at least 30 minutes to ensure enough time for all the ingredients to be well incorporated
  • Check on your soup after 30-40 minutes to see it has thickened if so remove from the stovetop and serve. Enjoy!

1-1/2 pounds lean ground beef (90% lean)
1 medium onion, chopped
1 can (28 ounces) diced tomatoes, undrained
2 cans (14-1/2 ounces each) beef broth
1 cup water
4 celery ribs, thinly sliced
4 large carrots, halved and thinly sliced
1/2 cup quick-cooking barley
1 teaspoon dried thyme
1/4 teaspoon pepper
1/4 cup minced fresh parsley

Steps:

  • In a large saucepan, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the tomatoes, broth and water. Bring to a boil., Add celery, carrots, barley, thyme and pepper. Reduce heat; simmer, covered, for 10-12 minutes or until vegetables and barley are tender., Remove from heat; stir in parsley. Let stand 5 minutes.

  • In a large pot over medium-high heat, brown the meat with the onion, celery, and garlic. Remove the pot from the heat and drain off as much fat as you can. (Discard the fat once it cools.) Return the pot to the heat and add the rest of the ingredients. Stir to combine, then bring to a boil. Reduce the heat, then cover the pot and simmer the soup for 15-20 more minutes, until potatoes are tender but not overly mushy.  Soup should be somewhat thick, but if you'd like it to be more "soupy," add 1 to 2 cups more broth OR hot water and heat through. Taste and adjust seasonings, adding more salt if needed. Serve with crusty bread!

And you'll definitely want to shred your own, since the pre-shredded stuff—while also more expensive—just doesn't melt as well in the chicken broth as cheese that's been shredded just before it goes into the pot.  Update 2/8/17: This recipe may work better if you first make a sauce with the cheese before adding it to the soup. After step #2, combine 2 tablespoons of butter with 2 tablespoons of flour in a medium saucepan. Whisk in 1 cup of milk until thickened, about 3 minutes. Remove it from the heat and stir in the cheese until it's melted. Keep the cheese sauce warm over low heat until you need it. Reduce the cornstarch to 1 tablespoon and dissolve it into the chicken broth in a large saucepan. Add the chicken, sauteed vegetables, and remaining ingredients for the soup (except the cheese sauce) and bring the mixture to a boil, then reduce the heat and simmer 10 minutes.
