This is my kid's all-time favorite casserole. They are grown now and they still beg me to make it. The recipe originally came from a hospital dietitian who gave it to my mother in the 1950's.

Steps:
- Brown meat and onion together until onions soften.
- Add next 8 ingredients and mix well.
- Stir in noodles.
- Pour into 13 x 9 inch baking pan or 2-quart casserole dish.
- Mix crumbs and margarine; sprinkle over top.
- Bake at 350° for 30 minutes, or until bubbly.

This was one of the most popular lunches our school cooks made for us. My family also loves it. It's an easy weeknight dinner and also freezes well. I often make a double batch and freeze one pan for later.

Steps:
- Brown beef and diced onion. Season with salt and pepper. Drain well.
- Preheat oven to 375*. Have ready a 9x13 baking dish.
- In a medium bowl stir together rice, soups, corn, and American cheese chunks.
- Place browned meat into baking dish. Pour rice mixture over the top. Cover with foil and bake 30-45 minutes, or until bubbly.
- Remove cover and sprinkle with shredded cheese. Bake 5 minutes until cheese is melted.

This can be a do ahead casserole just pour the ingredients into a casserole dish before you do the final 20 minute simmer and then pop it into a 350F oven 25-30 minutes before serving - put some buttered crumbs on top - I like to serve it over noodles or add cooked macaroni to it for the final simmer - I treat this as a good basic casserole that is tasty as is or even better with your creative touch
