Spanish rice recipes are a favorite busy-day dish for my husband and me. Even though we're retired, I often work on crafts or paint right up to mealtime. —Bernice Morris, Marshfield, Missouri

1 pound lean ground beef (90% lean)
1 medium onion, chopped
1/2 green pepper, chopped
1 cup uncooked instant rice
1 can (15 ounces) tomato sauce
3/4 cup hot water
1 teaspoon prepared mustard
1 teaspoon Worcestershire sauce
1 teaspoon salt
1 teaspoon sugar

Steps:

  • In a large skillet, brown the beef, onion, green pepper and rice. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer 20 to 25 minutes or until the rice is tender.

I found this in Better Homes and Gardens Low-Cost Cooking cookbook. I've had the cookbook for about 25 years and only recently discovered this recipe. It's one of those recipes that I make just about anytime because I always have the ingredients on hand and my family (especially my youngest son) loves it!

Number Of Ingredients 12

1 lb ground beef or 1 lb ground pork
1 medium onion, sliced and separated into rings
1 medium green pepper, coarsely chopped (I use frozen green pepper)
1 garlic clove, minced
1 cup medium grain rice
1 (16 ounce) can diced tomatoes
1 (8 ounce) can tomato sauce
1 teaspoon Worcestershire sauce
1/2 teaspoon dried basil
1 1/2 cups water
1 teaspoon salt
1/2 cup cheese, shredded

Steps:

  • In a skillet coated with spray oil, brown ground beef, onion, green pepper, and garlic until meat is browned. Drain off fat.
  • Add rice; cook stirring constantly, for 2 minutes.
  • Add remaining ingredients (except cheese).
  • Bring to a boil, reduce heat.
  • Cover and simmer for 25 to 30 minutes or until rice is tender, stirring occasionally.
  • Remove cover, sprinkle with cheese, if desired. (We put the cheese on at the table.).

Don’t be fooled by the simplicity of this dish. As it cooks, the flavors blend to create something that’s not at all simple -- the cabbage undergoes a subtle transformation when it melds with the ground beef. Even better the next day. This is comfort food. It’s not soup, but we eat it out of bowl like soup, pairing it with cornbread or crusty garlic bread. It makes a lot, but it’s wonderful tucked into whole-wheat pita for lunch the next day. Or add a can of chopped tomatoes, a can of corn and some broth to the leftovers for a delicious soup for supper in a day or two. Freezes well, too.

  • Variation: When the cabbage is tender crisp, stir in a large can of chopped tomatoes with the juice (and maybe a dash of cayenne pepper and ¼ -½ tsp. of turmeric, if we’re in the mood for a little heat.). Add a can of Ro-Tel tomatoes or ½-1 cup of chunky salsa, if desired. Continue cooking until the cabbage is done and the tomatoes are hot. Stir everything together and serve in bowls. This variation will be more like soup, although it still won’t have a lot of liquid. Sometimes we add some brown Minute Rice right at the end, too. If you do this, you need to increase the liquid somehow: add some tomato juice or water or chicken broth. As you can see, this is a very forgiving recipe that will let you adjust it to your “taste of the day” or the taste of the people you’re serving it to.
