This recipe was given to my mother and father after they had it in a very small Scottish restaurant in the NC mountains. It was supposedly an 'old family recipe' of the family who owned the restaurant. It is excellent with most any beef or game.

Ingredients

4 large baking potatoes
salt and freshly ground black pepper to taste
1 (15 ounce) can creamed corn
1 cup shredded sharp Cheddar cheese

Steps:

Preheat the oven to 350 degrees F (175 degrees C).
Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain. Allow potatoes to cool, then peel and slice into 1/2-inch rounds.
Put a layer of potatoes in a casserole dish and season with salt and pepper. Spoon 1/3 of the creamed corn over the potatoes and spread evenly. Repeat layers twice more, ending with the corn. Sprinkle shredded Cheddar cheese on top.
Bake in the preheated oven until cheese is melted and bubbly, about 20 minutes.

This is my kid's all-time favorite casserole. They are grown now and they still beg me to make it. The recipe originally came from a hospital dietitian who gave it to my mother in the 1950's.

Ingredients

1 1/2 lbs ground beef
1 cup chopped onion
1 (15 ounce) can whole kernel corn, drained
1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can cream of mushroom soup
1 cup sour cream
3/4 teaspoon salt
1/4 teaspoon pepper
1 (4 ounce) jar diced pimentos
1 (8 ounce) bag noodles, cooked ala dente (kluski style noodles work best)
1 1/2 cups soft breadcrumbs (I cut my bread in very small cubes)
4 tablespoons margarine, melted

Steps:

Brown meat and onion together until onions soften.
Add next 8 ingredients and mix well.
Stir in noodles.
Pour into 13 x 9 inch baking pan or 2-quart casserole dish.
Mix crumbs and margarine; sprinkle over top.
Bake at 350° for 30 minutes, or until bubbly.

Combine the soup, milk, garlic powder, pepper, onion and 1/2 cup cheese; pour over beef mixture. , Bake, uncovered, at 400° for 20 minutes or until vegetables are tender. Sprinkle with remaining cheese. Bake 2-3 minutes longer or until cheese is melted. Sprinkle with parsley if desired.

This casserole my grandma made for me when I was a little girl. Peel 4 lg potatotes, dice and boil till till fork tender but not soft or they will mash up in the casserole. dice and fry onion, add ground beef, fry till no longer pink, add 2 cans creamed style corn. I let this simmer while the potatoes are boiling. Add the drained potatoes. Being from Wisconsin, I sprinkle my serving with grated cheddar cheese. It's also really yummy with French's fried onion rings sprinkled on top.

While meat is cooking, peel potatoes, cut into small pieces and boil till soft. Drain potatoes; add butter, sour cream and cream cheese. Mash well, okay if lumpy.
