Just a pinch of nutmeg adds unexpected and appealing flavor to this basic creamy noodle dish.

8 oz. (4 cups) uncooked medium egg noodles
1 lb. lean ground beef
12 oz. small fresh whole mushrooms, halved (3 1/2 cups)
2 garlic cloves, minced
2 (1.0 to 1.3-oz.) pkg. beef or pork gravy mix
1/4 teaspoon pepper
2 1/2 cups water
1 (8 oz.) container sour cream
1/2 teaspoon nutmeg
1/4 cup chopped fresh parsley

Steps:

  • Heat oven to 375°F. Spray 3-quart casserole with nonstick cooking spray. Cook egg noodles as directed on package. Drain; cover to keep warm.
  • Meanwhile, in 12-inch nonstick skillet, cook ground beef, mushrooms and garlic over medium-high heat for 5 to 7 minutes or until beef is thoroughly cooked, stirring frequently. Drain; remove beef mixture from skillet.
  • In same skillet, combine gravy mix, pepper and water; mix well. Cook over medium-high heat for 3 to 5 minutes or until bubbly and thickened, stirring constantly. Remove from heat. Stir in sour cream and nutmeg.
  • Add cooked noodles and beef mixture to gravy; stir to combine. Spoon mixture into sprayed casserole; cover.
  • Bake at 375°F. for 30 to 40 minutes or until bubbly and thoroughly heated. Sprinkle with parsley.

Yield 4 Servings

Number Of Ingredients 15

4 Tbsp. extra-virgin olive oil, divided
2 Tbsp. unsalted butter, divided
8 oz. crimini mushrooms, halved, quartered if large (about 2 cups)
Kosher salt
1 lb. skirt steak, cut into 4" sections
Freshly ground black pepper
2 shallots, finely chopped
4 garlic cloves, finely chopped
1 Tbsp. double-concentrated tomato paste
2 Tbsp. all-purpose flour
¼ cup dry white wine
2 cups (or more) low-sodium beef broth
1 tsp. (or more) fish sauce
¼ cup sour cream
Buttered cooked egg noodles and sliced scallions (for serving)

Steps:

  • Heat 2 Tbsp. oil and 1 Tbsp. butter in a large skillet over medium-high until butter is melted. Cook mushrooms, tossing occasionally, until browned and tender, about 5 minutes. Season with salt, then transfer to a plate.
  • Combine 1 Tbsp. oil and remaining 1 Tbsp. butter in same skillet. Season steak generously with salt and pepper. Cook until well browned, 3–4 minutes per side for medium-rare, depending on thickness. Transfer to another plate; wipe out skillet.
  • Reduce heat to medium and pour remaining 1 Tbsp. oil into pan. Cook shallots, stirring often, until softened, about 2 minutes. Add garlic; cook, stirring, until softened, about 1 minute. Add tomato paste and cook, stirring constantly, until slightly darkened in color, about 2 minutes. Add flour and cook, stirring often to coat shallots and garlic, until toasty smelling, about 3 minutes. Add wine; cook, scraping up browned bits, until evaporated, about 1 minute. Add broth, fish sauce, and any liquid from mushrooms (leave mushrooms behind). Bring to a boil over high heat, then reduce heat; simmer, stirring occasionally, until sauce coats a spoon, 12–15 minutes.
  • Slice steak against the grain. Place sour cream in a small heatproof bowl and gradually whisk in 1 cup sauce. Stir back into sauce in skillet. Taste and season with more salt or fish sauce if needed. Stir in mushrooms. Serve sauce over noodles, topped with steak and scallions.

Reduce the heat, then cover the pot and simmer the soup for 15-20 more minutes, until potatoes are tender but not overly mushy.  Soup should be somewhat thick, but if you'd like it to be more "soupy," add 1 to 2 cups more broth OR hot water and heat through. Taste and adjust seasonings, adding more salt if needed. Serve with crusty bread!

  • Heat oil and butter in a large pot over medium-high heat. Brown meat in two batches, setting aside on a plate when brown. Cut pieces in half. Set aside. Add diced onions to the pot. Stir and cook for two or three minutes until softened, then add garlic for another minute. Pour in beer and beef stock, then add Worcestershire, tomato paste, paprika, salt, pepper, and sugar. Add beef back into the pot. Stir to combine. Cover and simmer for 1 1/2 to 2 hours.  *UPDATE: The liquid should cook down to a thicker state. If it gets too thick/reduces too much, add additional water as needed.  Add carrots and potatoes, then cover and cook for an additional 30 minutes. (If stew gets dry, just add a cup of hot water at a time to replenish the liquid.) Taste and adjust seasonings as needed. Serve in bowls next to crusty French bread. Sprinkle with minced parsley, if desired.
