Steps:
- Preheat oven to 400 degrees F (200 degrees C). Grease a 10-inch pie plate.
- Press spinach in an even, compact layer into the bottom of the prepared pie plate.
- Beat milk, ham, eggs, baking mix, onion, Cheddar cheese, and Monterey Jack cheese together in a bowl; pour over the spinach layer.
- Bake in preheated oven until quiche is set in the middle, 35 to 40 minutes.

I found this recipe in Woman's Day like 10 years ago. This is a great way to get spinach into your diet without the taste. My family hates spinach and you can't even taste it in this great recipe! Plus it is a great way to use your leftover ham from holiday parties!

Steps:
- Preheat oven to 400 degrees.
- Place crust in pie dish. Pierce with crust with fork to prevent bubbles. PLace dish on cookie sheet.
- Bake 10 minutes or until crust is dry.
- Let cool.
- Whish together eggs and milk. Add the remaining ingredients.
- Pour into crust. **.
- Sprinkle top with shredded cheese and top with tomatoes.
- Bake at 400 degrees for 20 minutes then reduce heat to 350 degrees for 40 minutes.
- Note : You may use 1 cup chives, chopped.
- **Extra egg mixture can be poured into ramekins and baked on cookie sheet with pie.

- Pre-heat the oven to 425ºF. Whisk the eggs in a large bowl and add the milk and half-and-half or cream. Whisk together thoroughly and then stir in the shredded cheese and herbs. Pour the mixture into the pie crust and bake for 30 minutes. If the quiche still has a liquidy and jiggly center, bake for another 10 minutes. If firm, remove from the oven and allow it to cool slightly before serving. Quiche can be served at room temperature. Tip: If your crust edges start to burn, wrap aluminum foil over the edges and keep cooking as instructed above.
