My Mom created this recipe and I really enjoyed it as a child. As an adult, my taste changed just a bit so I modified her recipe to 'kick it up' a bit. It is fabulous even though the ingredients list is quite short! This is a must make with leftover ham and everyone agrees it's absolutely delicious.

Number Of Ingredients 7

1 pound dry great Northern beans
½ pound cooked ham, diced
1 small onion, diced
½ cup brown sugar
salt and pepper to taste
¼ teaspoon cayenne pepper
1 tablespoon dried parsley

Steps:

  • Rinse beans in a large pot; discard shriveled beans and any small stones. Add 8 cups of cold water. Let stand overnight or at least 8 hours. Drain and rinse beans.
  • Return beans to pot and add ham, onion, brown sugar, salt, pepper, cayenne and parsley and water to cover. Bring to a boil; reduce heat and simmer 1 1/2 to 2 hours, until beans are tender. Add more water if necessary during cooking time.

Holiday ham leftovers, including the ham bone, make a delicious soup with the addition of aromatic herbs and vegetables, canned beans and small pasta such orzo or ditalini.

4 cups water
1 container (32 oz) Kitchen Basics® Original Chicken Stock
1 ham bone
1 medium onion chopped
2 ribs celery finely chopped
2 McCormick® Bay Leaves
2 cups diced ham
1 can (15 oz) cannellini beans drained and rinsed
1/4 cup orzo
1 tsp McCormick® Perfect Pinch® Italian Seasoning
1/2 tsp McCormick® Rosemary Leaves crushed

Steps:

  • Place water, stock, ham bone, onion, celery and bay leaves in large saucepan or Dutch oven. Bring to boil on medium heat. Reduce heat to low; cover and simmer 1 hour. Remove ham bone. Skim off excess fat.
  • Stir in ham, beans, pasta, Italian seasoning and rosemary. Cook 5 to 10 minutes or until pasta is tender. Remove bay leaves before serving.
