1 teaspoon coconut oil
4 mushrooms, finely chopped
¼ cup finely chopped onion
8 slices thinly sliced ham
8 eggs
freshly ground black pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly coat a muffin tin with oil.
  • Heat coconut oil in a skillet over medium-high heat. Add mushrooms and onion; saute until tender, about 5 minutes. Transfer to a bowl.
  • Line 8 muffin cups with 1 slice of ham each. Place a spoonful of mushroom mixture in each cup and crack 1 egg on top.
  • Bake in the preheated oven until egg whites are completely set, about 15 minutes. Top with black pepper.

Steps:

  • Preheat oven to 400º and grease a 12-cup muffin tin with cooking spray. Line each cup with a slice of ham and sprinkle with cheddar. Crack an egg into each ham cup and season with salt and pepper. Bake until eggs are cooked through, 12 to 15 minutes (depending on how runny you like your yolks). Garnish with parsley and serve.
