6 cups (6 medium) thinly sliced peeled potatoes (about 1 3/4 lb)
1 medium onion, coarsely chopped (1 cup)
1 1/2 cups cubed cooked ham
1 can (10 3/4 oz) condensed cream of mushroom soup
1/2 cup milk
1 1/2 cups shredded Cheddar cheese (6 oz)
1/4 teaspoon pepper

Steps:

  • Spray 3- to 4-quart slow cooker with cooking spray. In large bowl, mix potatoes, onion and ham; spoon into slow cooker.
  • In medium bowl, mix soup, milk, cheese and pepper; pour over potato mixture.
  • Cover; cook on High heat setting 3 to 4 hours or until potatoes are tender. Gently stir potatoes before serving.

2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
2 cups sour cream
2/3 cup butter, melted
1 teaspoon garlic powder
1 teaspoon pepper
6-1/2 pounds potatoes, peeled and cut into 1/4-inch slices
6 cups cubed fully cooked ham (about 2-1/2 pounds)
1 package (16 ounces) Velveeta, cubed

Steps:

  • Preheat oven to 350°. Mix first 5 ingredients. Stir in potatoes, ham and cheese. Transfer to 2 greased 13x9-in. baking dishes., Bake, covered, 1 hour. Uncover and bake until potatoes are tender, 45-55 minutes longer.
    , Freeze option: Cover and freeze unbaked casseroles. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casseroles as directed, increasing time as necessary to heat through until a thermometer inserted in center reads 165°.
