12 slices ham
1 c. shredded cheddar
12 large eggs
Kosher salt
Freshly ground black pepper
Chopped fresh parsley, for garnish

Steps:

  • Preheat oven to 400º and grease a 12-cup muffin tin with cooking spray. Line each cup with a slice of ham and sprinkle with cheddar. Crack an egg into each ham cup and season with salt and pepper.
  • Bake until eggs are cooked through, 12 to 15 minutes (depending on how runny you like your yolks).
  • Garnish with parsley and serve.

1 1/2 cups cubed fully cooked smoked boneless ham
1 cup shredded Swiss cheese (4 ounces)
1/4 cup chopped green onions or chopped onion
1/2 cup Original Bisquick™ mix
1 cup milk
1/4 teaspoon salt, if desired
1/8 teaspoon pepper
2 eggs
1 tomato, sliced
1 green bell pepper, cut into rings

Steps:

  • Heat oven to 400°F. Grease 9-inch pie plate. Sprinkle ham, cheese and onions in pie plate.
  • Stir Bisquick mix, milk, salt, pepper and eggs until blended. Pour into pie plate.
  • Bake 35 to 40 minutes or until knife inserted in center comes out clean. Cool 5 minutes. Garnish with tomato and bell pepper.
