Best Halva Recipe - How To Make Halva - Delish image

Halva is a Middle Eastern treat made from tahini that is similar to fudge, but much better!

tahini

3/4 tsp.

kosher salt

1 1/2 c.

granulated sugar

1/3 c.

water

1/2

vanilla bean (or 1 tsp pure vanilla extract)

3/4 c.

toasted pistachios 

1/2 tsp.

cardamom

3 oz.

roughly chopped chocolate 

1/4 c.

strong coffee

Steps:

  • Line a 8”-x-8” pan with parchment paper. Place tahini and salt in a large bowl. Place a kitchen towel under the bowl — this will help when stirring.  In a medium pot over medium heat, combine sugar, water, and vanilla bean seeds. If you are using vanilla extract, add it to the tahini mixture. Give it a stir, then without stirring, bring mixture to 245°. Use a wet pastry brush to wipe down sides of pan as sugar crystals form.  Once mixture is heated to 245°, carefully and slowly pour syrup into tahini mixture while stirring and continue to stir until fully combined and mixture thickens. Careful to not over mix after it thickens or your halva will be too crumbly.  Pour mixture into prepared pan and smooth top. Let cool to room temperature, then refrigerate until chilled, at least 3 hours. Add cardamom to tahini mixture. After adding sugar mixture to tahini, stir in ½ cup of pistachios.  Pour mixture into prepared pan top with remaining ¼ cup pistachios, pressing them in and refrigerate until chilled, at least 3 hours.  After stirring in sugar mixture to tahini, add chocolate to bowl and let sit for 30 seconds. Gently stir in chocolate leaving streaks.  Pour into prepared pan and refrigerate until chilled, at least 3 hours.  Add coffee to tahini with salt and stir until combined.  Heat and add sugar mixture as directed.

One 16-ounce French loaf
4 tablespoons (57 grams) unsalted butter, at room temperature 
2 tablespoons (30 grams) mayonnaise 
1/2 cup (60 grams) shredded provolone
2 tablespoons fresh oregano, chopped, plus more for garnish 
1 tablespoon fresh parsley, chopped, plus more for garnish 
1 tablespoon fresh basil, chopped, plus more for garnish 
1/4 teaspoon crushed red pepper flakes 
2 to 3 dashes Worcestershire sauce 
2 large cloves garlic, grated finely 
3/4 teaspoon kosher salt 
Couple turns black pepper 
1 cup (140 grams) Italian giardiniera, drained and chopped 
Grated Parmesan, for topping 

Steps:

  • Place an oven rack in the middle position. Preheat the oven to 450 degrees F.
  • Line a baking sheet with aluminum foil. Split the loaf lengthwise and place cut-side-up on the baking sheet.
  • In a small bowl, combine the butter, mayonnaise, provolone, oregano, parsley, basil, red pepper flakes, Worcestershire sauce, garlic, salt and pepper and mix with a small rubber spatula until fully combined.
  • Spread an even layer of the butter mixture on the cut sides of the bread. Bake until the cheese has dark spots and the edges of the bread are golden brown and crisp, begin checking at 12 minutes. Remove from the oven.
  • Scatter the giardiniera all over the bread. Top with Parmesan and fresh herbs. Slice and serve immediately.
