1 c. sour cream
1/2 c. mayonnaise
1 tsp. dried basil
1/2 tsp. black pepper
1/2 tsp. garlic powder
1/2 tsp. salt
1 package frozen chopped spinach
1/2 c. chopped scallions
1/4 c. shredded carrots
Wilton leaf green icing color (optional)
2 refrigerated breadsticks (from an 11-oz can)
Wilton Black Icing Color
1 round loaf pumpernickel bread
1 package cream cheese

Steps:

  • In medium bowl, combine sour cream, mayonnaise, basil, black pepper, garlic powder and salt; mix well. Stir in spinach, scallions and carrots; blend well. Tint green with icing color if desired. Cover and refrigerate 2 hours or overnight for flavors to develop. Heat oven to 350°F. Unroll 2 attached breadsticks from package of refrigerated breadsticks. Twist and form into handle shape. Insert toothpick into each end and bake as package directs. (You can bake the remaining breadsticks as well and serve them as an accompaniment to dip. Make sure to bake them immediately after opening the package.) Remove to rack to cool completely. Paint handle with black icing color. Cut top off bread and hollow out to form a bowl. Insert handle into top of bread bowl. In a small bowl, tint cream cheese black with icing color. Transfer to ziptop bag. Snip 1/2-in. hole from one corner of bag. Pipe around top of cauldron. Spoon dip into top of cauldron. Serve with Pumpkin-Shaped Tortilla Dippers and raw vegetables.

1/4 cup butter
1 cup onion, chopped
1 small red bell pepper, chopped
1 tablespoon garlic, finely chopped
2 tablespoons flour
1/2 cup chicken broth
1/2 cup heavy whipping cream
1/2 cup feta cheese
1 teaspoon italian seasoning
1/4 cup plain yogurt
1 (10 ounce) package spinach leaves, stems removed, cut into thin strips
1/8 teaspoon hot pepper sauce
salt
pepper

Steps:

  • Melt butter in 10-inch skillet until sizzling; add onion, red pepper and garlic.
  • Cook over medium heat, stirring occasionally, until onion is softened.
  • Stir in flour; continue cooking 1 minute.
  • Add broth and whipping cream.
  • Continue cooking, stirring with wire whisk, until mixture is thickened.
  • Stir in cheese, seasoning, yogurt, spinach and hot pepper sauce until spinach wilts and mixture is heated through.
  • Remove from heat.
  • Season with salt and pepper to taste.
  • Serve warm with crackers, bread slices or assorted vegetable sticks.
