My friend Sharon was a missionary in Haiti for a number of years. When we went to Pittsburgh to visit her and her new Haitian husband this is one of the many foods of Haiti she and John prepared for us. Th.ey have a little kick

Number Of Ingredients 8

2 cup(s) all purpose flour
1 cup(s) water
1 tablespoon(s) parsley, finely chopped
- kosher salt to taste
1 teaspoon(s) crushed hot pepper, habanero
2 teaspoon(s) baking powder
1 cup(s) chicken, cooked, boneless, shredded
1 cup(s) canola oil

Steps:

  • Combine flour with water. Add hot pepper, parsley, and baking powder.
  • Let mixture rest for an hour. Add boneless, shredded chicken and salt.
  • Heat oil and drop in mixture by tablespoonfuls. Fry until golden brown. Then serve hot.

1 pound Chicken wings (Drumettes are our favourite)
Soak overnight in fridge in:
1 cup Skim or 1% milk
1 cup Carnation milk
1/2 cup Vinegar
Salt To taste
Cayenne pepper To taste
Next day, dredge in:
White flour Start with 1 cup
Salt To taste
Old Bay Seasoning To taste
Corn oil For deep frying

Steps:

  • "Soak chicken overnight in fridge in skim or 1% milk, carnation milk, vinegar, salt and cayenne pepper. Next day, dredge in flour, salt and Old Bay Seasoning mixture (to taste). Preheat oven to 350F. Deep fry in corn oil until golden on both sides. Transfer to broiling pan and put in oven for 10 minutes so oil can drip off. Serve hot!"

  • Heat remaining oil in skillet add marinade to cook for 1 minute. Add chicken to pan and stir to incorporate. Add remaining tomato paste into 1 cup of boiling water to dilute and add to chicken. Cook covered over medium heat until chicken is fully cooked. Remove from heat, remove chicken from pan and strain liquid to remove extra spices residue. Reheat sauce in same pan, add 1/4 water (or more if necessary), season with additional salt and pepper and hot pepper or hot sauce if preferred. Add onion slices and bell pepper if using, and bring to a boil. Once sauce starts to thickens, add chicken and cook uncovered for 5 to 7 minutes on medium to low heat. Remove from heat and serve immediately.
