GYRO SKEWERS – IMPROMPTU KITCHEN



Gyro Skewers – Impromptu Kitchen image

If you use wooden skewers for this recipe, be sure to soak them in water for at least a half hour before using them or they will burn.

Number Of Ingredients 12

½ cup yogurt
¼ cup tahini
1 clove garlic (finely chopped)
½ tsp kosher salt
2 lbs pork loin or beef sirloin (cut into 2-inch cubes)
1 tsp sumac
1 tbs dried thyme
1 tbs garlic powder
1 tsp aleppo chile
2 tbs salt
4 globe or beefsteak tomatoes (quartered, slightly underripe is best)
2 tbs oil

Steps:

  • COMBINE the yogurt, tahini, garlic, and a half teaspoon salt in a small bowl. Mix it thoroughly and then set it aside.
  • TOSS the meat and tomatoes with the sumac, thyme, garlic powder, aleppo chile, remaining two teaspoons of salt, and the oil
  • SKEWER the meat and tomatoes, making sure each skewer has at least two tomatoes on it. This will take 6-8 skewers, depending on how long they are and how much you want to put on each one.
  • PREHEAT the grill to a medium high heat or turn your broiler on high and set a rack to the second-closest position from the flame.
  • COOK the skewers for about 12-15 minutes, turning them every 2-3 minutes until the meat is cooked through and the tomatoes are charred on all sides. If you are using the broiler, cook the skewers for about 20 minutes, turning them every five minutes.Serve the skewers with pita bread or maybe some sauce, and douse everything liberally with the tahini garlic sauce. The leftovers will keep for about a week in the fridge and they're excellent reheated for lunch.

I wanted gyro meat that tasted like the kind in the Greek restaurants. I wound up combining ingredients from 3 different recipes and was amazed at the awesome result! It smelled so good even before it hit the grill.The "easy" part is that you can just throw this on the grill, broil, bake or pan fry it. It's also easy because I buy the Tzatziki sauce, Quinoa tabouli, spanikopita appetizers and hummus at Costco and I have a ready-made meal for my family or a larger crowd. I also serve with split Pita breads and we make our own gyros with sliced garden tomato and sweet onion.

Number Of Ingredients 11

12 (6 inch) skewers
1 lb ground lamb
1 lb ground beef
2 green onions, finely chopped
2 teaspoons dried oregano leaves
1 teaspoon ground cumin
1/4 cup chopped fresh flat-leaf parsley
1 teaspoon dried mint
4 -6 garlic cloves, minced
1 1/2 teaspoons salt
1/2 teaspoon ground pepper

Steps:

  • Soak skewers in water for 30 minutes while you prepare the meat mixture.
  • In a large bowl, combine all the other ingredients. Mix well with hands (use rubber gloves).
  • Dry off the skewers so they aren't dripping wet, then form an oblong "sausage" around the skewer, securing firmly.
  • Cover and refrigerate skewered meat for 30 minutes.
  • If possible, use a veggie or fish grill (that has a smaller grate); brush or spray grill grate with oil.
  • Set grill to medium-off-medium and grill each side for 5 minutes, turning only once, or until the outside of the meat is charred and the inside is medium.
