This vegetable gyoza soup is both good for you and amazingly delicious. No need for storebought dumplings or stock. This flavourful vegan soup is easy to make at home from scratch.

16 homemade vegan gyozas (Get the recipe)
6 shiitake mushrooms (fresh or dried)
2 pieces of kombu (about 4 inches each or 15g)
4 cups water
1 medium onion (chopped)
4 cloves garlic (minced)
2 stalks scallions (chopped)
1 shiso leaf (chopped (optional))
2 tbsps soy sauce
1 tbsp sesame oil
Salt and pepper (to taste)
1 large carrot (cut into strips)
1 daikon radish (cut into strips)
Fresh pea sprouts
Wakame ((seaweed))

Recipe of Super Quick Homemade Gyoza Chicken Soup

Number Of Ingredients 13

Steamed gyoza see other recipe Gyoza
1 bundle udon 90 g
6 cups water for cooking noodles
6 cups chicken broth
1 inch ginger thinkly sliced
100 g spinach or as many as you like
1/4 cup shiitake mushrooms I used dried shiitake
Pinch black pepper
to taste Salt
1 tsp toasted sesame oil
1 tsp soy sauce
1/4 cup chopped celery
1 green onion for garnish

Steps:

  • Cook udon in boiling water according to package instruction. Set aside.
  • In a cooking pot, add broth, ginger, pepper, salt, soy sauce and sesame oil and bring to a boil.
  • Add chopped celery and boil for another 3 mins.
  • Add spinach to blanch on soup for 1 minute or according to cooking preference.
  • Arrange ingredients in a bowl with udon, garnish with green onions, add steamed gyoza and serve hot.
