Gumdrop Cookies I Recipe | Allrecipes image

A special cookie for the holidays, with spiced gumdrops, raisins and walnuts. For best results, be sure to pick out the black gumdrops.

Yield 3 dozen

Number Of Ingredients 10

1 cup packed brown sugar
½ cup shortening
1 egg
1?¾ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
¼ cup buttermilk
1?½ cups spiced gumdrops, chopped
¾ cup chopped walnuts
½ cup golden raisins

Steps:

  • In a medium bowl, cream together the brown sugar and shortening. Stir in the egg and buttermilk. Stir together the flour, baking soda and salt, add to the creamed mixture, mix until well blended. Stir in the chopped gumdrops, walnuts and raisins. Cover bowl, and chill for at least 1 hour.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Drop cookies by rounded teaspoonfuls 2 inches apart onto an unprepared cookie sheet.
  • Bake for 8 to 10 minutes in the preheated oven. Cool for 2 minutes on baking sheets before removing to cool on wire racks.

These fun cookies are chock-full of chewy gumdrops. I use red and green ones at Christmas, black and orange for Halloween and pastel shades for Easter. Number Of Ingredients 8

3/4 cup shortening
1 cup sugar, divided
1/2 teaspoon almond extract
1-3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup chopped fruit-flavored or spiced gumdrops
2 large egg whites, room temperature

Steps:

  • Preheat oven to 350°. Cream shortening and 3/4 cup sugar until light and fluffy, 5-7 minutes. Beat in almond extract. In another bowl, whisk flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in gumdrops. , In a separate bowl, beat egg whites until soft peaks form. Gradually add remaining sugar, beating until stiff peaks form. Fold into dough., Drop by level tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake until golden brown, 12-15 minutes. Cool 1 minute before removing from pans to wire racks to cool completely.
