1/8 ts Cream of tartar
FILLING
1 c Flour
2 tb Cold water
Guava slices
1/4 c Butter
Sweetened whipped cream
1/4 ts Salt
1 tb Lemon juice
FLAKY PASTRY SHELL
1 c Guava juice
4 Eggs separated
3/4 c Sugar
1 Envelope unflavored gelatin
1/4 c Shortening
3 dr Red food color; more or less

Steps:

Press into ball and chill 45 minutes. Roll out on floured board with well-floured or stockinette-covered rolling pin. Carefully transfer pastry to 9-inch pie plate. Pierce all over with fork. Bake at 400F 15 minutes. Cool. Meanwhile, to make filling, soften gelatin in lemon juice. Set aside. Combine egg yolks, guava juice and 1/2 cup sugar. Add a few drops red food color. Cook and stir over medium heat until mixture thickens. Add gelatin mixture and stir until melted. Cool mixture until it reaches consistency of unbeaten egg whites. Beat egg whites and cream of tartar together until soft peaks form. Gradually add 1/4 cup sugar and beat until stiff peaks form. Fold in gelatin mixture and pour into baked pastry shell. Chill. Top with sweetened whipped cream and garnish with guava slices. When I was a kid my mom used to make this pie and I justed love it so much that every year when it was my birthday I would ask for this pie instead of cake.

1 tablespoon(s) unflavored gelatin
1/4 cup(s) water
6 ounce(s) frozen guava juice thawed
4 - egg yolks
1/2 cup(s) sugar
3 tablespoon(s) lemon juice
4 - egg whites
1/4 cup(s) sugar
8 ounce(s) whipped cream, sweetened
3 - red food coloring drops
1 - baked 9inch pie shell
1/8 teaspoon(s) salt

Steps:

  • Sprinkle gelatin over water; let stand 5min. Combine 1/2c sugar,egg yolks,and guava juice in a pot cook on med. heat until thickened. Add gelatin and stir to combine add lemon juice and food coloring and cool completely.
  • Beat egg whites with salt until foamy; add 1/4c sugar gradually, beating until stiff and holding peaks. Fold the cooled guava mixture into the meringue. Chill at least 4 hours top with sweetened whipped cream.
