A family favorite, handed down by my mom, this turkey-stuffed acorn squash is nice to fix for company, as well as for routine meals. It's filling, literally!

Number Of Ingredients 12

1 teaspoon butter, softened
2 acorn squash, halved and seeded
2 cups cubed cooked turkey
1?½ cups shredded Cheddar cheese
½ cup sour cream
½ cup chopped green onions
1 (4 ounce) can diced green chiles
1 (2.5 ounce) can sliced ripe olives, drained
1 teaspoon garlic salt
¾ teaspoon ground cumin
¼ teaspoon ground black pepper
¼ teaspoon paprika

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a rimmed baking sheet with foil.
  • Slice a small disc off the bottom of each squash half; this will give you a flat surface for serving. Brush butter over the flesh. Place squash cut-sides down on the baking sheet.
  • Bake in the preheated oven until tender when pierced with a knife, about 45 minutes.
  • While squash is baking, mix turkey, Cheddar cheese, sour cream, green onions, green chiles, olives, garlic salt, cumin, pepper, and paprika in a bowl. Set aside.
  • Stuff cooked squash halves with equal amounts of the turkey filling.
  • Return to the oven and bake until filling is heated through, 15 to 20 minutes.

So flavorful, light, and satisfying, the seasoned ground turkey makes the perfect filling for the roasted acorn squash. Surprisingly simple to prepare, the presentation is lovely, and the taste is delectable.

1 1/2 lbs extra lean ground turkey
4 medium acorn squash ((halved and seeded))
2 large sized granny smith apples ((finely diced))
3 stalks celery ((diced))
1 egg
1 large onion ((diced))
1/2 cup dried cranberries
1 cup cooked brown rice
1 tsp allspice
1 tsp dried sage
Salt and pepper to taste

Steps:

  • Preheat oven to 425.
  • Lightly mist acorn squash halves with olive oil and season with salt and pepper. Place on a baking sheet and roast in oven for about 15 minutes….just enough to heat the squash through, then remove from oven and set aside.
  • While the squash is roasting, pray a large skillet with cooking spray or an olive oil mister and set over medium high heat. Add in turkey, and cook until no longer pink. Add in all remaining ingredients and stir to combine.
  • Lower oven temp to 375.
  • Spoon turkey mixture evenly into all 8 acorn squash halves. Place squash into a large baking dish and fill the base with hot water to a depth of about 1/2 inch. Cover with aluminum foil and bake for about 25 minutes. Remove foil, and bake uncovered for about another 20 minutes, or until the squash is very tender and begins to brown.
