Provolone and mozzarella are traditional pizza cheeses, but you can use any combination of your favorites.

1 teaspoon olive oil
1 cup chopped onion
3 garlic cloves, minced
1?¾ cups canned crushed tomatoes
? teaspoon salt
? teaspoon crushed red pepper
¼ cup chopped fresh parsley
2 tablespoons chopped fresh basil
1 (10-ounce) can refrigerated pizza crust dough
Cooking spray
2 cups chopped skinned cooked turkey
½ cup (2 ounces) shredded provolone cheese
½ cup (2 ounces) shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 400°.
  • Heat olive oil in a large nonstick skillet over medium-high heat. Add onion and garlic; sauté 4 minutes. Stir in tomatoes, salt, and pepper; bring to a boil. Reduce heat; simmer 15 minutes or until thick, stirring occasionally. Stir in parsley and basil. Remove from heat. Cool completely.
  • Roll dough into a 10-inch circle on a lightly floured surface. Place dough on a (12-inch) pizza pan or baking sheet coated with cooking spray. Crimp edges of dough with fingers to form a rim.
  • Spread tomato mixture over crust, leaving a 1/4-inch border. Top with turkey; sprinkle with cheeses. Bake at 400° for 10 minutes or until golden.

12 ounces whole-wheat pizza dough
1 teaspoon canola oil
6 ounces ground turkey
1/4 cup chopped scallions
2 garlic cloves, minced
1/2 cup reduced-sodium marinara sauce
3 ounces shredded reduced-fat colby-Jack cheese (about 3/4 cups)
2 plum tomatoes, cut into thin slices (7 oz.)
1 1/2 tablespoons canola mayonnaise
1 teaspoon pickle juice
1 tablespoon unsalted ketchup
1 teaspoon yellow mustard
2 teaspoons water
1 cup shredded iceberg lettuce
7 dill pickle chips

Steps:

  • Place a pizza stone or baking sheet in oven. Preheat oven to 450°F. Do not remove pizza stone while oven preheats. Let dough stand at room temperature for 30 minutes. Roll dough on parchment paper into a 14-inch circle. Heat oil in a medium nonstick skillet over medium-high. Add turkey, scallions, and garlic to skillet. Cook 5 to 6 minutes or until turkey is browned. Spread marinara sauce over pizza dough, leaving a 1-inch border. Top with cheese, turkey mixture, and tomato slices. Leaving pizza on parchment paper, place onto pizza stone or baking sheet. Bake 8 to 10 minutes or until browned. Transfer to a wire rack; let cool briefly. Combine mayonnaise, pickle juice, ketchup, mustard, and 2 teaspoons water in a small bowl. Drizzle mixture over top of pizza; top with shredded lettuce and pickle chips. Cut into 8 slices.
