1 cup uncooked instant white rice
1 cup water
1/4 lb. extra-lean ground beef
1 small onion, sliced
1 1/2 cups frozen broccoli florets, thawed
1/2 red bell pepper, cut into thin bite-sized strips
2 tablespoons purchased stir-fry sauce
2 tablespoons water
1/2 teaspoon grated gingerroot

Steps:

  • Cook rice in 1 cup water as directed on package.
  • Meanwhile, in medium nonstick skillet, cook ground beef and onion over medium heat until beef is thoroughly cooked, stirring frequently. Drain.
  • Add all remaining ingredients; cover and cook 4 to 6 minutes or until vegetables are crisp-tender, stirring occasionally. Serve vegetable mixture over rice.
