When the fall weather moves in, it's time to make this delicious chili. Serve over a piping hot sweet potato.

2 tablespoons coconut oil
2 cups diced onion
4 cloves garlic, minced
2 pounds ground beef
2 tablespoons chili powder
2 tablespoons ground cumin
1?½ tablespoons unsweetened cocoa powder
1 teaspoon dried oregano
1 teaspoon ground allspice
1 teaspoon ancho chile powder
1 teaspoon salt
1 (6 ounce) can tomato paste
2 cups beef broth
1 (14.5 ounce) can fire-roasted diced tomatoes, undrained
1 cup water

Steps:

  • Heat a large, deep pot over medium-high heat. Add coconut oil. When oil is shimmering, add onions. Cook and stir with a wooden spoon until slightly browned, about 5 minutes. Add garlic; cook until fragrant, about 30 seconds.
  • Crumble ground beef into the pot. Stir to combine and cook until beef is no longer pink, 5 to 7 minutes. Add chili powder, cumin, cocoa powder, oregano, allspice, ancho chili powder, and salt; stir until well combined. Mix in tomato paste and simmer for 1 to 2 minutes.
  • Add beef broth, diced tomatoes with juice, and water. Stir well and bring to a boil. Reduce heat to low and simmer for 2 hours.

1 Pound Laura's Lean Ground Beef
1 Tablespoon Olive oil
1 Sweet onion
1 Small green bell pepper
1 Tablespoon Chili powder
2 Teaspoons Cumin
2 Teaspoons Paprika
2 Tablespoons Tomato paste
1 Cup Beef broth
1 Can Fire roasted diced tomatoes
1 Can Tomato sauce
2 Teaspoons Brown sugar
2 Teaspoons Worcestershire sauce
1 Bay leaf
6 Cloves Garlic
Shredded cheddar cheese
Sour cream
Green onions
Salt and pepper to taste

Steps:

  • In a large pot or Dutch oven, heat oil over medium-high heat. Add the beef, onion, and garlic and cook, undisturbed for 2-3 minutes, or until edges start to brown. Season with salt and pepper. Cook, stirring occasionally, until beef is browned, but not completely cooked through, about 3-4 additional minutes.
  • Reduce heat to medium. Add the onion and bell pepper. Cook, stirring occasionally, until softened, about 5 minutes. Add 3 garlic cloves garlic, chili powder, cumin, paprika and oregano. Season to taste with salt and pepper. Cook, stirring, until fragrant, about 1 minute. Add the tomato paste and cook, stirring, until the tomato paste is caramelized, about 1-2 minutes.
  • Add in the broth. Let cook for 1-2 minutes. Add the diced tomatoes, tomato sauce, sugar, Worcestershire and bay leaf. Add in the beef along with any accumulated juices. Bring to a gentle boil over medium-high heat. Immediately reduce heat to simmer and cover.
  • Cook, uncovering to stir a couple times, for 30 minutes. Uncover and cook for 10 minutes, or until chili is thick and saucy. Remove bay leaf and discard. Taste and adjust for seasoning with salt and pepper.
  • Ladle warm chili into individual bowls and garnish with green onions, shredded cheddar cheese, and sour cream. Enjoy!
