Grits & Bacon Casserole Recipe: How to Make It image

A Mississippi home cook gave me her recipe for grits casserole. It baked like traditional custard. I garnish it with parsley, crumbled bacon and cheese. —Theresa Liguori, Elkridge, Maryland

4-1/2 cups water
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup quick-cooking grits
8 large eggs
8 bacon strips, cooked and crumbled
1 cup shredded Gouda cheese

Steps:

  • Preheat oven to 350°. In a large saucepan, bring water, salt and pepper to a boil. Slowly stir in grits. Reduce heat to medium-low; cook, covered, about 5 minutes or until thickened, stirring occasionally. Remove from heat. Pour grits into a greased 2-1/2-qt. souffle dish; cool completely., In a large bowl, whisk eggs; pour over grits. Sprinkle with bacon and cheese., Place casserole in a larger baking pan; add 1 in. of hot water to larger pan. Bake, covered, 45 minutes. Uncover; bake until knife inserted in the center comes out clean, 30-40 minutes. Let stand 5-10 minutes before serving. , Make-Ahead: Refrigerate unbaked casserole, covered, several hours or overnight. To use, preheat oven to 350°. Remove casserole from refrigerator while oven heats. Place casserole in a larger baking pan; add 1 in. of hot water to larger pan. Bake, as directed, increasing time as necessary for a knife inserted in the center to come out clean. Let stand 5-10 minutes before serving.

Number Of Ingredients 8

1 carton (32 oz) Progresso™ chicken broth (4 cups)
2 cups milk
1/4 teaspoon black pepper
1 1/2 cups quick-cooking grits
2 cups shredded Cheddar cheese (8 oz)
2 cups chopped ham
1/2 cup sliced green onions, plus 2 tablespoons for topping
3 eggs, beaten

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 4-quart saucepan, heat broth, milk and pepper to boiling. Slowly stir in grits. Reduce heat to low; cover and cook 6 to 8 minutes, stirring occasionally, until thickened and no lumps remain. Remove from heat. Stir in 1 1/2 cups of the cheese until melted. Stir in ham, 1/2 cup green onions and the eggs; transfer to baking dish.
  • Bake 30 to 35 minutes or until center is set. Top with remaining 1/2 cup cheese. Bake 3 to 5 minutes or until cheese is melted. Top with remaining 2 tablespoons green onions before serving.
