This was given to me when I requested a recipe for Wahoo by Lainie. It turned out absolutely fantastic. I used the leftover sauce on angel hair pasta. It was like pesto without the nuts. My Daughter called it the best pasta in the world!

Prep Time 20 minutes

Cook Time 20 minutes

Yield 4-6 serving(s)

Number Of Ingredients 8

1/2 cup butter, melted
1/2 cup extra virgin olive oil
6 fresh garlic cloves
1/3 cup fresh cilantro or 1/3 cup parsley
2 tablespoons cajun seafood seasoning
1 lemon, juice of
6 wahoo fillets, about 1/2 inch thick
lemon wedge (to garnish)

Steps:

  • Spray grill with nonstick spray or brush with vegie oil to prevent sticking. Preheat on high for about 10 minutes.
  • Mix first six ingredients in a blender. Purée into a smooth sauce.
  • When ready to cook, brush both sides of fillets with sauce. Place fillets on grill and cook, turning once or twice. Brush more sauce as needed.
  • Fish is done when it flakes easily (about 5 minutes). Serve with lemon wedges.

Marinate fish fillets - such as ono, swordfish, or wahoo - in a sake-soy mixture and grill for a super flavorful fish dinner.  Reduce the marinade in a saucepan and drizzle over fish; serve with homemade pineapple-fried rice.

Yield Makes 4 servings

Number Of Ingredients 6

¼ cup soy sauce
½ cup medium-dry sake
1 teaspoon sugar
½ teaspoon sambal olek (or garlic-chili paste)
4 (6-ounce) ono, swordfish, or wahoo fillets
Pineapple Fried Rice

Steps:

  • Combine soy sauce and next 3 ingredients in a large bowl. Add fish, and toss to coat. Cover and chill 20 minutes. Remove fish from marinade, reserving marinade.
  • Place marinade in a small saucepan over medium-high heat. Bring mixture to a boil, reduce heat, and simmer 8 to 10 minutes or until sauce reduces to 1/4 cup; keep warm.
  • Preheat grill. Place fish on a grill rack coated with cooking spray over medium-hot heat. Grill, covered, 4 minutes on each side or until fish flakes easily with a fork. Drizzle with marinade reduction, and serve with Pineapple Fried Rice.

Prepare your Ono for the grill, rinse, salt and I like to sprinkle a little paprika for the color. Just a little. Coat your filets with some olive oil. I like to use high heat on my Ono, so nice hot coals or let the gas grill get up to 500 degrees. Grill your Ono making nice grill marks on the hot grill.

Cook and then deglaze with white wine. Reduce the wine and add 1/4 cup of cream, more butter to taste and salt/pepper. The sauce was amazing and really worked well with the fish and mashed potatoes. Cooked the Ono on an indoor grill pan until both sides were seared. Finished in a 350 degree oven for around ten minutes.
