4 small fish steaks, about 3/4 inch thick (1 1/2 pounds)
Salt and pepper to taste
2 tablespoons butter or margarine, melted
2 teaspoons lemon juice

Steps:

  • Heat coals or gas grill for direct heat. Sprinkle both sides of fish steak with salt and pepper. Mix butter and lemon juice; set aside.
  • Grill fish steak uncovered about 4 inches from medium heat 7 to 10 minutes, brushing 2 or 3 times with butter mixture. Carefully turn fish. (If fish sticks to the grill, loosen gently with a turner.) Brush other side with butter mixture.
  • Grill uncovered 7 to 10 minutes longer or until fish flakes easily with fork. Brush with butter mixture.

1 garlic
1 red chile pepper
2 Limes
1 tablespoon chopped cilantro
5 tablespoons olive oil
300 grams Tuna steak (ready to cook, skinless)
300 grams Salmon (ready to cook, skinless)

Steps:

  • Peel the garlic. Rinse the chile, cut in half lengthwise, remove the seeds and finely chop in a blender with the garlic. Zest the lime, add the juice of one lime and cilantro and puree with the olive oil until it forms a creamy paste. Season with salt and pepper.
  • Rinse the fish, pat dry, cut into 4 equal-sized serving pieces and brush with the paste.
  • Place the fish on the hot grill and cook on each side for about 2 minutes, so that the core is still slightly raw. Serve on plates with various salads.
