4 tilapia fillets
salt and ground black pepper to taste
½ cup olive oil
1 teaspoon minced garlic
1 (14.5 ounce) can diced tomatoes
¼ onion, chopped
1 jalapeno pepper, seeded and minced, or to taste
1 large green bell pepper, chopped
1 tablespoon chopped fresh cilantro, or to taste

Steps:

  • Season tilapia with salt and pepper. Place olive oil and garlic in a bowl or resealable bag and add seasoned tilapia. Marinate in the refrigerator for at least 15 minutes.
  • Place each tilapia fillet onto its own aluminum foil square. Use the fish to smear the tin foil with olive oil. Spoon diced tomatoes, onion, and jalapeno evenly over fillets. Top with bell pepper and cilantro. Fold packets up like envelopes.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Cook fillets on the preheated grill until easily flaked with a fork, about 10 minutes, flipping halfway through cooking time.

Tilapia is a mild, white fish that is flaky and yummy. You can take this recipe for grilling it in foil packets and alter it to your own liking. The tilapia is very forgiving.

2 tilapia fillets
½ teaspoon dried dill weed
¼ teaspoon kosher salt
freshly ground black pepper to taste
10 chives, cut in half
1?½ tablespoons butter, cut into pieces

Steps:

  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Cut a piece of heavy duty aluminum foil large enough to make an airy foil pouch to hold tilapia fillets.
  • Place fillets on top of the foil and season with dill, salt, and pepper. Place chives on top of fillets, followed by butter. Seal up pouches loosely.
  • Cook fillets on the preheated grill until they flake easily with a fork, 10 to 15 minutes.
