This fresh, light slaw is great with fish tacos.

2 ears fresh sweet corn, husks removed
1 lime, juiced
½ cup chopped cilantro
½ teaspoon ground cumin
1 pinch salt
ground black pepper to taste
1 tablespoon olive oil
½ head red cabbage, shredded
1 jalapeno pepper, seeded and diced
¼ cup crumbled queso fresco

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Place corn on hot grill and cook until charred on all sides, about 15 minutes. Remove corn from grill and cool.
  • Pour lime juice into a bowl; add cilantro, cumin, salt, and pepper. Pour olive oil into lime juice mixture while continuously whisking until dressing is smooth. Add cabbage and jalapeno pepper to dressing and toss.
  • Cut corn from cob and mix into cabbage mixture. Crumble queso fresco over slaw; toss well.

It still retains plenty of crunch, but the flavor turns sweeter overall, with those irresistible charred bits around the edges. The dressing combines light mayo and cider vinegar, which has more body than a vinaigrette and will cling better to all the veggies. The slaw holds up well, so you can make it up to a day in advance.

1 head(s), small Uncooked green cabbage about 2 lb
3 Tbsp Light mayonnaise
2 Tbsp Cider vinegar
0.75 tsp Kosher salt
0.5 tsp Black pepper
0.5 cup(s), sliced Uncooked red onion(s) thinly sliced
0.333 cup(s) Fresh parsley chopped
1 large Uncooked carrot(s) grated on the large holes of a box grater
1 medium Orange bell pepper thinly sliced

Steps:

  • Coat an outdoor grill rack with cooking spray. Heat grill to medium-high heat. Cut the cabbage into 1-in-thick wedges, leaving the core intact so wedges don’t fall apart. Coat wedges on both sides with cooking spray. Arrange the cabbage wedges on the grill rack; grill until lightly charred, 4 to 5 minutes per side. Remove the cabbage from the grill and cool slightly.
  • In a large bowl, whisk the mayonnaise, vinegar, salt, and pepper. Add the onion, parsley, carrot, and bell pepper; toss well to coat. Cut the cabbage crosswise into thin slices. Add the cabbage to the bowl and toss well to coat.
  • Serving size: about 1 cup
