1 can (16.3 oz) refrigerated Pillsbury™ Grands!™ Southern Homestyle Buttermilk Biscuits (8 Count)
2 teaspoons vegetable oil
8 slices (2/3 oz each) American cheese

Steps:

  • Separate dough into 8 biscuits. Press or roll each to form 5 1/2-inch round.
  • In 10-inch skillet, heat oil over medium heat until hot. Add biscuit rounds, a few at a time; cook 3 minutes. Turn; cook about 3 minutes longer or until light golden brown. Remove from skillet.
  • Place 2 slices of cheese on each of 4 biscuit rounds. Top with remaining biscuit rounds.
  • Return to skillet; cook 2 to 3 minutes or until golden brown. Turn; cook about 2 minutes longer or until cheese is melted.

Number Of Ingredients 10

2 cups cubed potatoes
1-1/2 cups water
1-1/2 cups cubed fully cooked ham
1 large onion, chopped
3 tablespoons butter
3 tablespoons all-purpose flour
1/4 teaspoon pepper
3 cups milk
1-1/2 cups (6 ounces) finely shredded cheddar cheese
1 cup frozen broccoli florets, thawed and chopped

Steps:

  • In a saucepan, bring potatoes and water to a boil. Cover and cook for 10-15 minutes or until tender. Drain, reserving 1 cup cooking liquid; set potatoes and liquid aside., In a large saucepan, saute ham and onion in butter until onion is tender. Stir in the flour and pepper until smooth; gradually add milk and reserved cooking liquid. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat to low. Add the cheese, broccoli and reserved potatoes; cook and stir until cheese is melted and soup is heated through.

The trick to great grilled cheese sandwiches isn’t in the ingredients, but on the stove. Achieving a golden, crusty outside and oozy inside takes a little patience: if the heat is too high, the outside will scorch before the cheese melts. Cooking the slices separately at first gives the cheese a good head start. There’s no need to search out artisanal loaves or local cheese (though they won’t hurt), but definitely do not use homemade mayonnaise. Mustard, chutney or even strawberry jam (believe it) can be dabbed on the cheese as it melts, or add ham, prosciutto or slices of apple or tomato (drain on paper towels first). You can use any melting cheese, such as American, Muenster or Swiss, but not too much: part of the perfection here is in the proportion of bread to cheese.
