Grilled Chicken with Peaches Recipe: How to Make It image

My grandmother gave me this recipe, which I lightened up. My children loved it when they were little, and now my grandchildren ask for it when they come over. The peaches are delicious hot off the grill. -Linda McCluskey of Cullman, Alabama

Number Of Ingredients 10

1 cup peach spreadable fruit
2 tablespoons olive oil
4 teaspoons reduced-sodium soy sauce
1 tablespoon ground mustard
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon cayenne pepper
8 boneless skinless chicken breast halves (4 ounces each)
8 medium ripe peaches, halved and pitted

Steps:

  • In a small bowl, combine the first eight ingredients; set aside. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack., Grill chicken, covered, over medium heat for 5-7 minutes on each side or until a thermometer reads 170°, basting occasionally with some of the reserved glaze. Transfer to a serving platter; keep warm., Grill peaches cut side down for 8-10 minutes or until tender, turning and basting every 2 minutes with remaining glaze. Serve with chicken.

1 cup peach preserves (or jam)
2 cloves garlic cloves (peeled and minced)
2 tablespoons olive oil
1 tablespoon soy sauce
1 tablespoon dry mustard powder
0.5 teaspoon cayenne pepper
coarse salt
freshly ground Black pepper (to taste)
Oil (for grill)
31.5 ounces Chicken thigh (rinsed and patted dry)
31.5 ounces Chicken drumstick (rinsed and patted dry)
4 ripe but firm Peaches (pitted and quartered)
fresh thyme (chopped; for garnish)

Steps:

  • Preheat grill to medium heat.
  • In a medium bowl, combine preserves, garlic, olive oil, soy sauce, dry mustard, and cayenne. Season with salt and pepper and mix well. Once grill is hot, brush grill grates with vegetable oil. Pat chicken dry with paper towels. Season with salt and pepper and place, skin side down, on the grill.
  • Cook about 4 to 6 minutes on each side before brushing with glaze. Continue cooking another 5 to 7 minutes, turning chicken every 2 to 3 minutes and brushing top with glaze, until chicken is cooked through. The chicken is done when an instant-read thermometer registers 165ºF when inserted into the thickest part of the chicken. Transfer to serving platter.
  • While chicken is cooking, place peach quarters on the grill, cut side down, and cook 2 minutes. Turn, and brush with glaze. Grill 2 to 4 minutes more, until the peaches are soft and juicy. Transfer to platter with chicken. Garnish with chopped thyme.
