The air fryer is the answer for always crispy, always gooey grilled cheese sandwiches. Here's how to make them.

2 tablespoons unsalted butter
4 ounces sharp cheddar cheese
4 ounces Monterey Jack, Gruyère, or low-moisture mozzarella cheese
4 slices rustic bread, or white or whole-wheat sandwich bread

Steps:

  • Let 2 tablespoons unsalted butter sit at room temperature until softened. Heat an air fryer to 375ºF.
  • Grate 4 ounces sharp cheddar cheese and 4 ounces Monterey Jack cheese on the large holes of a box grater (about 1 cup each). Toss together in a medium bowl.
  • Spread the butter onto one side of each of 4 slices sandwich or rustic bread. Flip 2 of the slices over and divide the cheese evenly over these slices. Close the sandwiches with the remaining 2 bread slices butter-side up. Press the sandwiches slightly to close.
  • Air fry the grilled cheeses: place in the basket (do one at a time if they will not fit in a single layer with some space around them) and air fry for 3 minutes. Flip the sandwich and air fry until golden brown, 3 to 4 minutes more.

The secret to a perfect grilled cheese recipe? Mayonnaise! (No, really, it makes the outside crispier and tangier.) Spread butter on one side of each bread slice and mayo on the other. Sandwich the cheddar slices between the buttered sides, leaving the mayo sides on the outside. Fry for a few minutes until golden, dip into a bowl of tomato soup, and resolve to never make a grilled cheese without mayo ever again!

Yield 1 serving

Number Of Ingredients 4

2 pieces sourdough bread
1 ½ tablespoons unsalted butter
1 ½ tablespoons mayonnaise
3 slices cheddar cheese

Steps:

  • On a cutting board, butter each piece of bread with butter on one side.
  • Flip the bread over and spread each piece of bread with mayonnaise.
  • Place the cheese on the buttered side of one piece of bread. Top it with the second piece of bread, mayonnaise side out.
  • Heat a nonstick pan over medium low heat.
  • Place the sandwich on the pan, mayonnaise side down.
  • Cook for 3-4 minutes, until golden brown.
  • Using a spatula, flip the sandwich over and continue cooking until golden brown, about 2-3 minutes.
  • Enjoy!

  • Ingredients out • Food processor (bowl blade) • Large frying pan, medium heat • Griddle pan, high heat START COOKING 1. Drain the beans and chickpeas and put them into the processor. 2. Finely grate in the lemon zest, then add a pinch of sea salt and black pepper, the harissa, allspice, flour and coriander stalks (reserving the leaves). Blitz until smooth, scraping down the sides of the processor if needed. 3. Scrape out the mixture and use clean, wet hands to quickly divide and shape it into 8 patties about 1.5cm thick. 4. Pop the tortillas into the microwave (800W) for 45 seconds while you marble the chilli sauce into the cottage cheese. 8. Squeeze the juice of half the zested lemon over the charred veggies, then take with the falafels to the table, scattering everything with the rest of the coriander. 9. Let everyone assemble their own wraps, and serve with pickled red cabbage, if you like.
