Honey-Lemon Grilled Carrots - Hy-Vee Recipes and Ideas image

Because why not grilled whole carrots and lather them with fresh lemon juice? They're equal parts impressive and delicious.

1.5 lbs. of carrots with tops
0 Hy-Vee salt
0 Hy-Vee ground black pepper
2 tbsp. of Hy-Vee honey
2 tbsp. of fresh lemon juice
1 tsp. of Hy-Vee Dijon mustard
1 tbsp. of fresh thyme
0 Lemon wedges

Steps:

  • 1.

    Prepare a charcoal of gas grill with oiled grill rack for direct grilling over medium-high heat.

  • 2.

    Wash and peel carrots. Trim carrot tops, leaving 1-inch tops. Spray a large sheet of heavy-duty foil with nonstick cooking spray. Place carrots on half the foil. Season with salt and pepper. Fold foil in half to cover carrots; make a narrow fold in edges to seal.

  • 3.

    Grill foil packet for 30 minutes. While carrots are grilling, combine 2 tablespoons honey, lemon juice, mustard, and thyme in a small bowl; set aside.

  • 4.

    Remove packet from grill and carefully open. Place carrots directly on grill rack. Grill for 15 to 20 minutes or until carrots are lightly charred, turning occasionally and brushing with honey-lemon mixture.

  • 5.

    Transfer carrots to a serving platter. Drizzle with additional honey and garnish with additional thyme, if desired. Serve with lemon wedges.

2 ears fresh sweet corn, husks removed, each cut into 4 pieces
4 small (new) red potatoes (about 1/2 lb.), each cut in half
2 carrots, cut diagonally into 1 to 1 1/4-inch chunks
1 medium zucchini, cut into 1-inch chunks
1 medium onion, cut into thin wedges
1/4 cup butter, melted
2 tablespoons Dijon mustard
1/2 teaspoon dried thyme leaves
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Heat grill. In large bowl, combine corn, potatoes, carrots, zucchini and onion. In small bowl, combine all remaining ingredients; mix well. Pour butter mixture over vegetables; toss to coat. Cut four 18x12-inch pieces of heavy-duty foil. Divide vegetable mixture evenly onto center of each cut foil piece. Wrap each packet securely using double-fold seals, allowing room for heat expansion.
  • When ready to grill, place packets, seam side up, on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 25 to 35 minutes or until vegetables are tender.
  • To serve, open packets carefully to allow steam to escape.
