THAI GREEN CURRY RECIPE | JAMIE OLIVER CURRY RECIPES
The first time I ever had Thai green curry I was sixteen years old and it blew my mind! This green curry paste is so quick to make, yet the flavours are really complex, refreshing and delicious. With Christmas leftovers, it’s a dream. Boom.

- Preheat the oven to 180ºC/350ºF/gas 4.
- Wash the squash, carefully cut it in half lengthways and remove the seeds, then cut into wedges. In a roasting tray, toss with 1 tablespoon of groundnut oil and a pinch of sea salt and black pepper, then roast for around 1 hour, or until tender and golden.
- For the paste, toast the cumin seeds in a dry frying pan for 2 minutes, then tip into a food processor.
- Peel, roughly chop and add the garlic, shallots and ginger, along with the kaffir lime leaves, 2 tablespoons of groundnut oil, the fish sauce, chillies (pull off the stalks), coconut and most of the coriander (stalks and all).
- Bash the lemongrass, remove and discard the outer layer, then snap into the processor, squeeze in the lime juice and blitz into a paste, scraping down the sides halfway.
- Put 1 tablespoon of groundnut oil into a large casserole pan on a medium heat with the curry paste and fry for 5 minutes to get the flavours going, stirring regularly.
- Tip in the coconut milk and half a tin’s worth of water, then simmer and thicken on a low heat for 5 minutes.
- Stir in the roasted squash, roughly chop and add the leftover greens and leave to tick away on the lowest heat, then taste and season to perfection.
- Meanwhile, cube the tofu and fry in a pan on a medium- high heat with 1 tablespoon of groundnut oil for 2 minutes, or until golden.
- Crush the peanuts in a pestle and mortar and toast in the tofu pan until lightly golden.
- Serve the curry topped with the golden tofu and peanuts, drizzled with a little sesame oil. Slice the chilli and sprinkle over with the reserved coriander leaves. Serve with lime wedges, for squeezing over. Great with sticky rice.

- Heat a dry frying pan and add the coriander and cumin seeds. Toast until they begin to colour and release their aromas. Remove from the heat, then grind to a powder using a pestle and mortar. Wrap the shrimp paste in foil and in the same dry pan, ‘toast’ the foil package for 2 mins on each side.
- Pound the garlic using a pestle and mortar, then add the shallots, coriander, chillies, galangal, turmeric and lemongrass. Finally, add the shrimp paste and ground spices and pound to a smoothish paste. Alternatively, whizz everything in a small blender or mini chopper in the same order or, for the best and easiest results, half pound in a pestle and mortar, then finish in the chopper. The recipe makes double so save half, but you can also make a much bigger batch if you want.
- To make the curry, open the cans of coconut milk, carefully remove the thick cream and spoon it into a warm wok or large frying pan. Cook it slowly, stirring all the time, until it reduces to a thick paste and the oil starts to separate. Add the sugar, let it dissolve then cook until caramelised and smoking. Stir in the green curry paste and cook for 1-2 mins. Add the chicken and stir well to coat in the paste.
- Pour in the rest of the coconut milk, scatter in the lime leaves and splash in half the fish sauce. Let the sauce bubble for about 10 mins until the oil in the coconut milk starts to come through to the surface and the chicken is cooked. Add the green beans and squeeze in the juice of 1 lime. Taste the sauce – you are after a hit of salt (from the fish sauce) sweet, (from the sugar) and sour (lime juice) – and adjust accordingly. Simmer everything for 5 mins more until the beans are just cooked. Scatter over the Thai basil and red chilli, then bring to the table in the cooking dish and serve with jasmine rice.

Blanch the cauliflower in salted boiling water for a couple of minutes then drain in a colander, allowing it to steam dry (you don't want any water left in your cauliflower or it won't roast properly). Toss it in a good lug of olive oil and the butter. In a pestle and mortar, bash your spices and chillies with a pinch of salt, then mix them with your almonds and put in a hot, dry ovenproof pan to slowly toast them. After a couple of minutes, add the cauliflower. When it gets a nice bit of colour on it, add the lemon zest and juice and mix around well. Fry for about a minute longer then pop the pan into the preheated oven for about 15 minutes to crisp up.

Put the rice in a pan with 500ml cold water. Bring to the boil, then turn down to a simmer and cook, covered, for 14 minutes.
Meanwhile, heat the oil in a large pan. Add the curry paste, coriander stalks, green beans and most of the chilli and cook over a low heat for 5 minutes, then pour in the fish stock. Bring to a gentle simmer, then add the fish sauce. Cook for a further 5 minutes.
Stir in the fish pie mix and cook for 1 minute. Add the spinach and coconut milk, then cook gently for 2 minutes, but don't boil. Stir through the lemon juice and most of the coriander leaves. Garnish with the remaining coriander and chilli and serve with the rice.
Cook's tip: for a thicker curry, use full-fat coconut milk.

- To make the curry paste, peel, roughly chop and place the garlic, shallots and ginger into a food processor.
- Trim the lemongrass, remove the tough outer leaves, then finely chop and add to the processor. Trim and add the chillies along with the cumin and half the coriander (stalks and all). Blitz until finely chopped, add the fish sauce and blitz again.
- Slice the chicken into 2.5cm strips. Heat 1 tablespoon of oil in a large pan on a medium heat, add the chicken and fry for 5 to 7 minutes, or until just turning golden, then transfer to a plate.
- Tear the mushrooms into even pieces. Return the pan to a medium heat, add the mushrooms and fry for 4 to 5 minutes, or until golden. Transfer to a plate using a slotted spoon.
- Reduce the heat to medium-low and add the Thai green paste for 4 to 5 minutes, stirring occasionally.
- Pour in the coconut milk and 200ml of boiling water, crumble in the stock cube and add the lime leaves. Turn the heat up and bring gently to the boil, then simmer for 10 minutes, or until reduced slightly.
- Stir in the chicken and mushrooms, reduce the heat to low and cook for a further 5 minutes, or until the chicken is cooked through, adding the mangetout for the final 2 minutes.
- Season carefully to taste with sea salt and freshly ground black pepper. Pick, roughly chop and stir through the basil leaves and remaining coriander leaves. Serve with lime wedges and steamed rice.
