I have been making Green Corn Tamales for years. They are different than regular tamales and are time comsuming but well worth it. It really helps to have another person to help with the wrapping. My DH usually helps, he is good at husking the corn and clean up. I usually make when corn is in season & cheap. My family loves them. The original recipe comes from a restaurant and I made some changes.This makes 12 to 16 good sized tamales.

Yield 12-16 Tamales

Number Of Ingredients 10

24 ears corn, save husks
1/2 lb cornmeal
1/2 cup shortening
1/2 cup unsalted butter
3/4 cup sugar (I use Splenda) or 3/4 cup Splenda sugar substitute (I use Splenda)
1/2 cup half-and-half cream
1 teaspoon salt
12 -16 ounces cheddar cheese or 12 -16 ounces cheese, of choice cut into 1-ounce pieces
1 (24 ounce) can whole green chilies, cut into strips
aluminum foil, for wraping (12 to 16 pieces 12x12)

Steps:

  • Cut both ends of the corn, remove husks and save for wraping,(Put husk in water), cut corn kernels off the cob, use a spoon and scrap corn cobs.
  • Place corn kernels in food processor, grind, Add cornmeal and grind together, set aside.
  • Beat shortening and butter with electric mixer until creamy, add sugar, half and half and salt; ADD corn mixture and mix well.
  • FOR each TAMALE, overlap two or more corn husk and spread some of the corn mixture onto the husk.
  • Place one cheese strip and chile strips(I used about 1/2 of a whole chile in each tamale without seeds, seeds makes then HOTER your choice).
  • Top with MORE corn mixture; Bring edges of husk over OR add another husk on top, to cover filling complety, Bring bottom of husk over tamale.
  • Wrap in foil,lay tamale on foil, bring one side over, bring up the bottom, then bring other side over leaving top open.
  • Place tamales upright in a steamer or large kettle with steamer basket in bottom.
  • Steam for 45 to 50 minutes, enjoy.

2 tablespoons olive oil
1 pound ground chicken 
1 large onion, diced 
1 jalapeño, seeds removed for less heat if desired, minced 
2 cloves garlic, minced 
1 teaspoon ground cumin 
1 teaspoon ground coriander 
4 cups low-sodium chicken broth 
2 cooked chicken breasts, such as from rotisserie chicken, shredded
1 cup salsa verde 
1 1/2 teaspoons kosher salt 
1/2 teaspoon freshly ground black pepper 
2 cans cannellini beans, drained and rinsed 
1/2 cup half-and-half 
Cheese Skulls, recipe follows
Tortilla chips, sour cream, cilantro, chopped scallions, for serving 
1 1/2 cups whole milk shredded mozzarella

Steps:

  • Heat 1 tablespoon olive oil in a Dutch oven over medium-high heat. Add the ground chicken and use a wooden spoon to break up the meat as it browns. Remove the chicken to a plate and set aside.
  • Add the remaining tablespoon olive oil to the Dutch oven and reduce the heat to medium. Add the onion and jalapeño. Cook, stirring often, until the onions are translucent and tender, 5 to 6 minutes. Stir in the garlic, cumin and coriander and cook until the spices are fragrant, 1 to 2 minutes. Add the chicken broth, shredded chicken, cooked ground chicken, salsa verde, salt and pepper and use a wooden spoon to scrape up any browned bits on the bottom of the pan. Bring to a low boil, reduce the heat to a simmer and let simmer, stirring occasionally, 1 hour. Stir in the beans and half-and-half and continue to simmer, uncovered, until the liquid has reduced and the chili is thick, about 30 minutes.
  • Serve with cheese skulls, tortilla chips, sour cream, cilantro and scallions.
  • Preheat the oven to 400 degrees F.
  • Place a 6-count skull mold on a baking sheet.
  • Sprinkle 1/4 cup cheese into each skull mold. Bake until the cheese has melted and the edges just begin to brown slightly, 4 to 5 minutes.
  • Allow the skulls to cool for 2 minutes, then remove from the pan. Serve on top of a warm bowl of chili. Cheese Skull recipe courtesy of The Kitchen.

Watch carefully that all the water doesn’t boil away and, to keep the steam steady, pour boiling water into the pot when more is necessary. Tamales are done when the husk peels away from the masa easily. Let tamales stand in the steamer off the heat for a few minutes to firm up. For the best textured tamales, let them cool completely, then re-steam about 15 minutes to heat through.

  • Bring liquid to a boil over high heat, then reduce heat to medium-low. Cover pot and simmer tamales, undisturbed, adding more broth as needed to keep some liquid in the pot, 40 minutes. Remove 1 tamale and let cool about 3 minutes. (If you don’t let the tamale rest before checking, the masa is guaranteed to stick to the husk and appear gummy, so you really have to wait.) Remove husk; if masa sticks to husk, it’s not ready. Carefully re-fold and return to pot. Cook 5 minutes, then check again. If husk is easily removed, your tamales are fully cooked!
