1 1/2 cups grated cheddar cheese
1 cup chopped red bell pepper
1/4 cup chopped green onion
1/2 cup mayonnaise
1/2 cup sour cream
1 (10.5 oz.) bag coarsely crushed Chili Cheese Fritos corn chips
Salt and pepper, to taste

Steps:

In a large bowl, toss together corn, cheese, red pepper and green onion. Stir in sour cream and mayonnaise.
Stir in corn chips just before serving. Season with salt and pepper, to taste.

1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
4 cups shredded Monterey Jack cheese
2 cups 4% cottage cheese
1 can (4 ounces) chopped green chiles

Steps:

In a large bowl, beat eggs on medium-high speed for 3 minutes or until light and lemon-colored. Combine the flour, baking powder and salt; gradually add to eggs and mix well. Stir in the cheeses and chiles. , Pour into a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 35-40 minutes or until a knife inserted in the center comes out clean. Let stand for 5 minutes before serving.,
