1 lb fresh green beans, trimmed
3 tablespoons lite olive oil
1 teaspoon balsamic vinegar
1/4 teaspoon black pepper
4 tablespoons coarsley chopped walnuts or 4 tablespoons coarsley chopped pecans, toasted
lemon wedge (for garnish)

Steps:

  • In a large non stick skillet bring an inch of water to boil.
  • Add beans and cook uncovered until beans are still crisp (about 5 minutes).
  • Drain beans.
  • Place green beans on a serving platter and keep warm.
  • Add olive oil to the skillet plus vinegar and pepper.
  • When this mixture is sizzling stir in the nuts.
  • Drizzle sauce over the beans.
  • Garnish with lemon wedges and serve.

2 tablespoons chopped peeled hazelnuts, or walnuts
¼ teaspoon salt
Freshly ground pepper, to taste

Steps:

  • Cook beans in a large pot of boiling salted water until just tender, 5 to 7 minutes. Drain.
  • Heat oil in a large nonstick skillet over low heat. Add nuts and cook, stirring, until golden, about 1 minute. Return the reserved beans to the pot and toss to coat. Season with salt and pepper.

  • YOU ARE ALMOST THERE once the prep is done. Over medium heat, add the minced garlic to the hot skillet in the bacon grease. Stir it around for a minute until it releases its flavor, then add the green beans and just toss the beans a couple of minutes to warm them through. (don't overcook) Remove beans from heat.
