The easy dressing is a mixture of red wine vinegar, fresh lemon juice, dried oregano, and extra-virgin olive oil. Simply said, it's the best. Especially considering this Mediterranean side dish only takes 15 minutes to prepare.

1 pt. grape or cherry tomatoes, halved
1 cucumber, thinly sliced into half moons
1 c. halved kalamata olives
1/2 red onion, thinly sliced
3/4 c. crumbled feta
2 tbsp. red wine vinegar
Juice of 1/2 a lemon
1 tsp. dried oregano
Kosher salt
Freshly ground black pepper
1/4 c. extra-virgin olive oil

Steps:

Make salad: In a large bowl, stir together tomatoes, cucumber, olives, and red onion. Gently fold in feta. In a small bowl, make dressing: Combine vinegar, lemon juice, and oregano and season with salt and pepper. Slowly add olive oil, whisking to combine. Drizzle dressing over salad.

1 bunch parsley, leaves picked, not chopped
1/2 cup pitted and halved black olives
1/2 small red onion, chopped
2 tablespoons cider vinegar
2 tablespoons lemon juice
4 tablespoons olive oil
Salt and freshly ground black pepper
8 ounces Greek feta cheese, diced

Steps:

Toss together all ingredients except feta cheese in a large bowl. Let sit at room temperature for 1 hour to allow flavors to develop. Toss in the feta cheese just before serving and taste for seasoning and adjust seasoning, if necessary.
