Beautiful Mediterranean flavours combined into one vegan bake, ideal for a large group or a quick meal for the family.

450g new potatoes
200g courgettes - cut into chunks
2 peppers - deseeded and sliced
Moving mountains plant based sausages
2 tbsp Olive oil
1 tbsp Italian herb seasoning
Pinch of salt to taste
250g cherry tomatoes
75g pitted green olives
Handful of fresh basil

Steps:

  • Pre-heat your oven to 200°C/fan 180°C/gas mark 6.

    Add the potatoes, courgette, peppers, Moving Mountains Plant-based sausages, olive oil, Italian herbs and salt to the baking tray and mix till combined

    Place mixture in the preheated oven and bake for 15 mins, mixing once during baking

    Remove tray bake from the oven and add in the cherry tomatoes and bake for a further 10 minutes

    Remove tray bake from the oven and top with olives and basil or coriander before serving

Add Greek flavours of feta, oregano and pine nuts to this meaty tray bake and serve straight from the oven to allow everyone to dig in

olive oil 4 tbsp
chopped tomatoes 400g tin
passata 600g
red wine 200ml
ground cinnamon 2 ½ tsp
dried chilli flakes 1½ tsp
runny honey 4 tbsp
fresh oregano chopped to make 2 tbsp
feta 200g
flat-leaf parsley a handful, chopped to serve
pine nuts 25g, toasted
bread, couscous or orzo to serve
lamb mince 400g
lean beef mince 200g
red onion 1 small, finely chopped
garlic 3 cloves, crushed
greek yogurt 75g, plus extra to serve
soft breadcrumbs 75g
dried oregano 1 tbsp

Steps:

  • Mash all the meatball ingredients with lots of freshly ground black pepper and a big pinch of salt. Roll into 18 fat meatballs and chill for 30 minutes.
  • Heat the oven to 170C/fan 150C/gas 3. Put the olive oil in a frying pan and, in batches, brown the meatballs well on all sides, then scoop out.
  • Pour off any oil, add the chopped tomatoes and passata to the frying pan and bring to the boil, scraping up all the meaty bits as you do. Transfer to a deep baking dish or oven tray. Stir in the red wine, cinnamon, chilli flakes, honey and oregano, and some seasoning. Sit the meatballs in the sauce, then cover the whole dish with foil. Bake for 1 hour and 30 minutes.
  • Turn the heat up to 220C/fan 200C/gas 7. Remove the foil and break over the feta in chunks, then put back in the oven for 15 minutes. When it’s ready, scatter with parsley, sprinkle with pine nuts and dollop with a little greek yogurt, if you like. Serve with bread, couscous or orzo.

  • Make the spice mix by combining the paprika, cayenne, thyme, garlic granules, onion granules and celery salt in a bowl. Season and mix to combine. Add half the spice mix to a large bowl with the buttermilk and chicken. Mix to coat the chicken, then cover and leave to marinate in the fridge overnight. Reserve the remaining spice mix. 

    Preheat the oven to 220°C/200°C fan/gas mark 6. Remove the marinated chicken from the fridge. Mix the reserved spices with the flour, and put the beaten eggs, breadcrumbs, and spiced flour in three separate bowls large enough to dip the chicken in.

    Take each piece of marinated chicken, dip in the spiced flour first, then the egg mixture, and finally in the breadcrumbs to coat thoroughly. Tap to remove excess crumbs and place on a large baking tray. Once all the chicken thighs are coated, bake in the oven for 40-50 minutes, until dark golden and cooked through.

    When the chicken has been in the oven for 15 minutes, bring 400ml water to the boil in a saucepan. Add the rice, cover and cook for 10 minutes. Remove the rice from the heat and leave to steam with the lid on for another 10 minutes.

    Remove the lid and fold through the beans, coriander, carrot, cabbage and lime juice, taste and check for seasoning. Serve the chicken with the warm rice salad.
