VEGETARIAN WHITE BEAN SOUP RECIPE: HOW TO MAKE IT

- In a large saucepan, saute the zucchini, onion, celery and carrot in oil over medium heat until crisp-tender, 5-7 minutes. Add the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer until vegetables are tender, 5 minutes. If desired, garnish with fresh oregano.

This is the best baked bean recipe I have ever tried! I used great northern beans instead of the butter beans because of family preferences. I doubled the recipe and added 1/4 cup more brown sugar, again because we like a little more brown sugar in our beans. Everyone raved over the beans. I would highly recommend this recipe!!
