How to Make Grass Jelly Tea

Number Of Ingredients 2

Dried mesona chinensis 2 ounces
Brown sugar 3 tablespoons

Steps:

  • Wash and strain mesona leaves well.
  • Add leaves and 20 cups of water into a pot and bring it to a boil.
  • Let boil for 10 minutes and remove impurities from the surface.
  • Bring heat down to medium and simmer for at least 2 hours, ideally 4 hours. Continue to remove impurities and add 2 cups of water at a time if it’s looking dried down.
  • Strain out the leaves well. You should end up with about 40 or more ounces of juice. If there’s less, add a bit more filtered water to avoid bitterness.
  • Add brown sugar.
  • Enjoy hot or cold!

Grass jelly tea How to Make Grass Jelly Tea 1 cup
Agar agar ? (.20) ounce
Tapioca starch ? (~.30) ounce

Steps:

  • Mix tapioca starch with a couple tablespoons of water. Set it aside.
  • In a saucepan bring tea to a boil.
  • Mix agar agar into the tea and stir well.
  • Mix the starch water again. Pour and stir it slowly into the tea while it’s still boiling.
  • Keep stirring while it’s boiling. It’s important to see that the whole pot has started to thicken before taking it off the heat.
  • Take the mixture off the heat and let cool in a non-plastic container. It should thicken and solidify more within a couple of hours.
  • Refrigerate.
  • Enjoy!
