Raspberry Protein Balls - Life Made Sweeter image

These Raspberry Protein Balls are made with healthy dates, crunchy nuts, freeze-dried raspberries and packed with flavor, protein and nutrition. In just 10 minutes, you can whip them up for an easy grab-and-go breakfast or pre-workout snack! Gluten-free, grain-free, vegan, paleo and freezer-friendly!

1/2 cup unsalted roasted cashews
1/2 cup sliced almonds
1/3 cup unsweetened coconut flakes (, you may sub with more sliced almonds if you're not a fan of coconut.)
1 cup Medjool dates (, pitted)
1/4 cup creamy unsalted cashew butter ((or any nut butter / seed butter of choice))
2 tbsp plant-based protein powder
4 tbsp freeze-dried raspberries
1 1/2 tsp vanilla extract
1 tsp ground cinnamon
1/4 tsp pinch of sea salt
2-3 tbsp dairy-free (or regular) mini chocolate chips ( + more for pressing)

Steps:

  • Add cashews, almonds, coconut flakes, dates, nut butter, vanilla, cinnamon and salt to a food processor.
  • Process ingredients until a sticky cookie dough forms. The dough should be pinch-able and stick together when you press it with your hands. Add more nuts or nut butter as needed to adjust the consistency and taste.
  • Transfer the dough to a large bowl. Fold in raspberries and chocolate chips and mix to combine.
  • Roll dough into 1-inch balls. Press a few more raspberries and chocolate chips in each ball (to make them prettier), if desired.Store in a resealable bag or airtight container in the fridge (for up to 1 week) or freezer for up to 3 months.

2/3 c. old fashioned oats 
1/4 c. unsweetened shredded coconut 
2 tbsp. mini chocolate chips 
1 tbsp. chia seeds
1 tbsp. flax seeds
1/4 tsp. ground cinnamon 
pinch of kosher salt 
1/3 c. natural peanut butter
2 tbsp. honey 
1/4 tsp. pure vanilla extract 
2 tbsp. milk

Steps:

  • Line a large baking sheet with parchment paper. In alarge bowl, combine oats, coconut, chocolate chips, chia,flax, cinnamon, and salt. Stir in peanut butter, honey,vanilla, and 1 tablespoon milk. Mixture should be slightlycrumbly. If it’s too dry, gradually stir in up to 1 moretablespoon of milk.
  • With wet hands, roll mixture into small balls and placeonto baking sheet. Refrigerate until chilled, 30 minutes.
